Satisfaction: ★★★★★ The aroma that wafts through the air as soon as the bottle is opened is a strange scent. The aroma is not unpleasant, but I have never smelled anything like it. In the mouth, there is a light sweetness, umami, followed by sourness and finally bitterness. Everything is in good balance, but the sweetness is the most noticeable. If we were to compare it to a fruit, it would be Mikka Mikan. It is not a tangerine like Setoka. I don't feel the melon so much, but I keep eating more of them just like eating mandarin oranges one after another at a kotatsu (a Japanese low table over the fireplace). I didn't think it was good at the moment I put it in my mouth, but it tastes good slowly. It tastes great even as a food wine. I had a bottle of Junmai Oragami Nama Sake by Tocho Mutsugorou before, which was a very gorgeous, sweet and delicious sake, but in comparison, Sawayaka is more refreshing and tasty. I guess that means the taste is what the name is aiming for. By the way, there are many breweries I like in Saga.
