Shinanotsuru's stubborn table! This is my first time to try Shinanotsuru... does it taste stubborn? The impact starts with sweetness, then comes a light sourness, and ends with bitterness. Before the aftertaste comes, you can feel the alu feeling, but it is not that strong...but the aftertaste itself leaves a rather long aftertaste, doesn't it? It is quite assertive, so you may have to choose dishes to go with it. You may like it or not. I think it's a direction I like.

Now, we finally open the doors to Hana-yoso! Let's start with the Yatanishiki Premium! Straighten up...let's eat! Wow...the aroma is already pineapple! It tastes like pineapple already! The aroma is sweet and tart, but the bitterness gives it a dry kick. I mean, this is a drink called "Hana-yosu".... It was worth the effort to get it! It's a bottle, so I'll be drinking it while enjoying the changes 🥰.

It's been a long time since I've been to Amami! I've been away since Mr. Fujioka left the company. This is the first time since the new organization took over, so I'm looking forward to it! First of all, without the oriji...hmmm...! It's sweet and sour! The sharpness from there is the same as ever! It's been a while since I last drank it, so I can't tell the difference, but I don't think it's any less delicious. It has a good balance of sweetness, sourness and sharpness. The aftertaste has some alkalinity and a unique aftertaste. I don't know if I felt this the last time I drank it or not, because it is not mentioned in any of the previous posts... Well, I can't help but honestly respect and appreciate that you are still going through all of this... Thanks for the treat!

Yonezuru's...Erekimo? It seems to be "Erekimo" which stands for "Elegant Kimotozukuri"...what a twisted name! I can only hope for something like this! The taste... I see... The first impact comes from the acidity, and from there it goes down smoothly with a light alty feeling. It's good as a food sake... I prefer it when it's well chilled because the aftertaste gets stronger as the temperature rises.

First one in March is my wife! (It's been a while) Hello Yumachi! I'm glad it's easier to buy than before... Actually, I've had Aizan, but this is my first time to drink Omachi! Well then...Bon appétit! Mmmm..! Delicious! (Conclusion) From the sweetness to the chili, then to the rummy and the usual unexpressible Yumachi feeling (as usual)... The alc. is also low at 14 degrees, which adds to the drinkability... It is a characteristic of Kouei Kiku that the taste changes after the bottle is opened, so it was the right choice to have a bottle! I'm going to drink it gradually...

Za "Ru" Souhourai! (For the second time) So, this time it's a Junmai Ginjo Queen! This one is even lower in alcohol at 12 degrees...let's see what it tastes like! It has a slight sweetness and acidity, and the low alcohol content makes it easy to drink. It's like a lighter version of the green label Junmai... it's rather dry. It is also easy to drink! Personally, I'd like to have a certain degree of crispness, so if I had to choose between the two, I'd go for the green label. But both are delicious, so I recommend them!

Za "Ru" Souhourai (reconfirmation) It's been a while - I'm looking forward to this one! The balance of sweetness and sourness is good! It's more of a sweetness, but the acidity is light and not too strong. The sweetness is also very thick, so you would expect it to be heavy, but it is easy to drink anyway because of its low alcohol content of 14 degrees. If you are a sweet and sour skier, this is a must-have! This is delicious! I recommend it!

It's been a long time since I've seen Yamato Shizuku! It's a little late in the season, isn't it, Yukino Yamato? First of all, let's try it without the ori... The sweetness comes first, then a light bitterness, and then it goes down smoothly. I wonder if it will be the same if you add the ori...? When the temperature rises a little, the overall taste expands. The sweetness increases and the aftertaste becomes longer, but it is better to drink it differently depending on your likes and dislikes. If you want to enjoy it while eating, drink it when it is well chilled. If you want to enjoy it by itself, drink it at a higher temperature. It may be a little out of the ordinary, but it might be fun to try heating it up lightly.

It is the famous rice and agave flower style that is well known in the rumor mill! Until now, craft saké has been too expensive for me to drink... Although it still seems rather expensive, I took the plunge and bought it because of its high reputation on social networking sites! First of all, I didn't even mix the cage...what the heck is this? It's hard to describe it...it's like a sunburst of Koureikiku, with a huge sourness & acidity & tartness! The sweetness comes from there, and then the sourness again, and the bitterness is not so much, but it is very clean and crisp! When mixed with Ori, the initial sourness mellows out a bit, but the impact is still amazing... Even a liqueur made from fruits with strong acidity, such as pink grapefruit, would pass this test... It doesn't feel like a sake at all! I drank something amazing...!

It's my first time to drink Hakugakusen! Junmai Daiginjo...I'm looking forward to it! Oh, this is so good! You can feel the sweetness of the rice and a very light acidity, and it finishes quickly (I was drinking sweet and sour earlier, so maybe it's a little different). (I was drinking sweet and sour sake earlier, so it might be a little different...) However, what an easy to drink sake... this is delicious! It's a jun-dai, but it's not like a jun-dai, and it's really good!

It's my first time to taste Tohoku Izumi! I'm looking forward to drinking Dewa Sanzan because I have a chance to drink it! I'm so excited to drink my first brand! Oh, this one is easy to drink again! The umami sweetness of the rice comes in softly, and the light bitterness makes it go down smoothly. It looks rather heavy at 16.5% alc, but it's quite light and easy to drink... Well... this is very easy to drink! It's kind of relaxing... it would be good to warm it up. I've been drinking so much sweet and sour lately that sometimes I can't tell the difference, so this is a good reset for me.

Masumi's light nigori! When I bought it, I was warned to open it slowly so it wouldn't blow... but But when I kept it at -5℃, I was able to open the bottle without any problems, which was a bit of a letdown. I opened it without mixing the corkage first... oh, wow! It has a great carbonation! I thought it was going to be a little chili, but it ended with a light sweetness and a bit of bitterness. The dryness is increased by mixing with ori, and it becomes even easier to drink! This is a dangerous one that I can gobble down! Highly recommended!

I had some Sentori before the rebranding. I thought about keeping it, but it doesn't make sense, so I'll drink it. Ahhhh, this is so good! It has a strong sweetness with a slight bitterness. It was good after the re-branding, but the old one is still good too! It's a sake full of the "standard" of SENKYO in my mind... I can't say "SENKYO" in my mind is this taste. It makes me feel at ease. Well, it's just my opinion, but...

Even though Sentori has been rebranded, it still has the basic "Sentori" character. I need to re-drink the new product as well. The fourth bottle of the rebrand is in our fridge, so I'm looking forward to the weekend (tomorrow) 😅.

First time at Matsumidori! S.tokyo is often seen in the X sake community, so I'm looking forward to seeing it! The miraculous revival of a fantastic yeast discovered in 1909 after 115 years (according to the official page), and the expectations are growing...! The taste is....sweet! It's so sweet! Oh, sweet! It's a barrage of sweetness, sweetness, sweetness, so much so that it's probably sweeter than a bad kijo sake! However, a light acidity comes in later, and it is not too sharp or dull. It's a very unique sake among the ones I've had recently, but... I love it! However, it has a strong sweetness, so I don't think it's a sake that I would drink in large gulps. If you are a sake-bikiner, I think this will have a big impact on your concept of sake! Yes, I recommend this one! If you're a sweet-skinned person, this is a must-have!

This time it's Ishikawamon! This time it's Ishikawa-mon! It has a light sweetness, acidity, and gasiness! Anyway, it's easy to drink and the refreshing taste that doesn't spoil the taste of snacks is quite nice! If the taste is too strong, the sake is complete on its own... that's what makes it so interesting, though! The only drawback is that it's hard to tell the difference between the Hyakumangoku No Shiro and the Hyakumangoku No Shiro. You can't tell unless you drink it at the same time, and even if you could, the difference would be subtle (subjective). I think it would be more enjoyable to compare the two if there was a clear difference between the two to differentiate them. Well, this is just my personal feeling, so please forgive me if I'm off...

It's been a while since I've had a Yoshida Kura... The label looks different from the last one I had, doesn't it? Ah, so this one is a draft sake... To be honest, Yoshidagura is often expensive. I'm grateful to be able to buy this one at a relatively normal price. The taste is... lactic sweetness, light acidity, slight bitterness, and a slight effervescence that finishes nicely. The alcohole degree is also quite light at 13%, so it's a light drinker, which is very good for regular drinking, don't you think? This is the kind of sake that I would recommend to anyone! I would like sake beginners to try it!

Returning to the mountains (after 3 months) So, this is the extra edition of "Back to the Mountain"! The last one was delicious...I have high expectations for it! Ahhh, this one is good (smiling). Although the aroma is a little alty, when you drink it, it is easy to drink with a slight sweetness and not too strong acidity. In other words, it's the type of beer that makes you drink too much of it and get sick of it. The aftertaste is not too harsh, and it finishes dry with a light bitterness, so I think it is also good during a meal. This is good! It's so refreshing!

This was my first visit to Mine-no-Hakubai! It is brewed by three young brewers who are determined to defeat Mr. Touji Ijima! They were beaten back and this is their fourth attempt...will they win the day...? The power of youth...let's see it! From the apple-like taste, accompanied by sourness, the aftertaste is so easy and clean! There is a lingering bitter aftertaste that is a bit complex, but it disappears quickly, so I don't feel bad about it. This is a very high level sake...? I think it's more than enough to give a sense of the future. What kind of monster is Mr. Ijima who can't win even with this... amazing!
