Returning to the mountains (after 3 months) So, this is the extra edition of "Back to the Mountain"! The last one was delicious...I have high expectations for it! Ahhh, this one is good (smiling). Although the aroma is a little alty, when you drink it, it is easy to drink with a slight sweetness and not too strong acidity. In other words, it's the type of beer that makes you drink too much of it and get sick of it. The aftertaste is not too harsh, and it finishes dry with a light bitterness, so I think it is also good during a meal. This is good! It's so refreshing!

This was my first visit to Mine-no-Hakubai! It is brewed by three young brewers who are determined to defeat Mr. Touji Ijima! They were beaten back and this is their fourth attempt...will they win the day...? The power of youth...let's see it! From the apple-like taste, accompanied by sourness, the aftertaste is so easy and clean! There is a lingering bitter aftertaste that is a bit complex, but it disappears quickly, so I don't feel bad about it. This is a very high level sake...? I think it's more than enough to give a sense of the future. What kind of monster is Mr. Ijima who can't win even with this... amazing!

It has been raining for a long time! The only limited distribution stores are Isego Honten and SakeBase in Chiba, Japan. And this special shaped bottle! It's also a nice shape...it even fits in my door pocket! I'm going to transfer it to this bottle when I buy a bottle in the future! And the taste... When you first drink it without ori, the sweetness is not that strong, and the acidity comes in spontaneously and quickly. When I add ori, I feel that the sweetness increases a little more than the milky flavor, or is it just me? I feel it is similar to Yuki no Mayu (old brewer's forest). Of course, my taste is also a good point! Well, let's drink this and get ready for work tomorrow! There is no label on the back, so here are the specs (quoted from Isego Honten) Alcohol 14%. Sake degree -4 Rice used: Harumi from Isehara, Kanagawa Prefecture

The first Ona! And a zodiac bottle! I've heard of this brand but haven't tried it, so I'm looking forward to it...although I'm not sure if it's a good idea to debut a zodiac bottle right away. The sweetness of the rice is the first taste, followed by the rummy taste, and the light bitterness is the finish. It is very easy to drink. When the temperature rises a little in the mouth, the aftertaste with bitterness becomes stronger. I think I like it better when it's cooled down a bit. I think it's also good during a meal because it's so refreshing and doesn't spoil the taste of the food. P.S. I drank up to 4 cups in one night! This is not good!

This is what the New Year is all about... So, this is the first sake I've ever had! It was given to me by an acquaintance who said she couldn't drink alcohol... I was so grateful that I gave it to him on New Year's Day! What a great taste...it's a pure white, oozy, muddy white! The taste... it's not sweet, it's amazake! It tastes like a sweet sake! Rice! Rice! It's almost no sweetness, but it's not undrinkable... I guess I appreciate it more than it tastes good! A good experience!

New Year's Eve will be here before you know it! The last bottle of this year is the 50th anniversary bottle of Tazake! It has a strong sweetness, but it's not too strong, and the aftertaste is rather refreshing. Not only that, but you can feel a kind of "thickness" in the taste... It's frustrating that I can't explain it well, but... Anyway, I don't know how to describe it, but it's delicious! Anyway, it's delicious! I can only say that it's a masterpiece........ Maybe... this is it. The person who gave it to me hasn't identified it yet, but it seems to be a keg draft sparkling from Daishinshu, so... I got it yesterday, but I'm going to drink it today! Wow... this is nice. Basically, it's quite dry. There is no excessive sweetness, no excessive sourness, and the carbonation and rice sweetness comes lightly, and the bitterness is not too strong either... and then it finishes nicely. It is a very easy-drinking sake... It is the kind of sake that is too easy to drink because it goes down too smoothly. It is not a sake that is too easy to drink because it goes down too smoothly. I... like it. What's more, it's the best food wine that doesn't spoil the taste of food! It's delicious!

It is the last day of work! I've been so busy this year that I don't know what's going on... So, the rebirth of Bunraku! First of all, the labels are stylish! As a label collector, I'm so happy! The taste is... oh, it's pure Dai, but the acidity is quite good! The brewer also said that he aimed for "a sake with a sourness like a lemon"! The aftertaste is a bit peculiar...you may or may not like it! It's interesting that they are aiming for the sourness of a Lemon, rather than the beauty or fragrance of a Lemon....

A little early Christmas! It's a Christmas version of Yuki no Mayu! It's a return gift from a crafan that just ended a few days ago! I heard that it didn't give off a fizzy feeling, but... well, what do you think? Well, the sourness from the sweetness is still nice, isn't it, this brewery? It is true that the fizziness is not that great, but the balance of sweetness and sourness is good, and I felt a lactic acid feeling like Yakult! Delicious... it's a good Christmas! (P.S.) I know, it's a light nigori... I almost opened it without stirring! When stirred, the sweetness is pulled back a little and the sourness comes to the front, making it refreshing to drink...

Aizu Miyazumi after a long time! I got it from a set purchase at a certain izakaya. Basically, the sweetness comes from the rice, then the umami comes and the bitterness finishes it off. -It is cooled down to 5℃, so if you let it get used to room temperature, the taste will expand more. I guess keeping it at ice temperature doesn't mean everything is good. I've learned that it's only a preservation method, not a way to make it taste better! I'm going to heat it up later. I have a feeling it will probably taste better that way!

Hello, Dr. Tasake! This time it's microbubbles with a name like "microbubbles" that seems to remove dirt well! I've never had a chance to drink it, because I have to finish all the bubbles as soon as possible... Taste-wise, it's really like a splash of carbonated rice wine! The aroma is of rice wine, but the sweetness is light and the bitterness is refreshing! It's nice to be able to drink it lightly... but I think I'm going to drink too much! It might be good to drink it like champagne while eating! It is quite light, so I don't think it will spoil the taste of food. If you ask me if I like it... hmmm? I don't dislike it, but I don't think it's something I would repeat.

It's been a long time since I've had Ozeyuki! I'm looking forward to it, as it's my first time to try pure Daijozo zest! It's a very nice and sweet sake with a nice sharpness.... It's a taste that's full of, well, gentleness! From the first impression to the aftertaste, it has a mild sweetness and aftertaste, and is very easy to drink! I recommend it!

So, this is the third Sentori rebrand! The previous Modern Sentori was also delicious! This time, I bought a sake fridge, so it's already freezing (-5 degrees Celsius)! Let's enjoy it now! Oh, yes! Sourness! (Sourness!) The sweetness comes first, but then the sourness kicks in and you can drink it refreshingly. The aftertaste is a bit of light bitterness. It does not leave a bad aftertaste, so it's totally OK! I've tried three kinds of Edo Eri, and this is the one I like the best. However, all three are perfectly suited to my tastes, so I can only say that they are delicious no matter which one I drink.

Koei Chrysanthemum is my wife (for the 15th time in 9 months) So, this is Kouei Kiku's Sumikai! I'm so glad I didn't buy this one... but they only had one bottle, so I had to endure my wife's cold stare as I bought it! Now, how does it taste...? Oh, come on! It's still good, isn't it? (Overjoyed) The sourness comes from a rather light and gentle sweetness, but it's not that strong...it's mild for a Koueikiku...? I felt a light Yakult aftertaste in the back of the aftertaste... I felt this at the first impression, but after the second sip, I almost didn't feel it anymore, but... Koeihiku is still delicious...

The second Sentori! It is a classic! It has a sweet to chili taste with a light acidity and bitterness, which makes it easy to drink. It has a typical Sentori taste and we can recommend it to many people! Perhaps it is because it is made with Kame-no-o, but it has a sweetness that is more forward than the retro flavor, making it easy to recommend to everyone. I think it is easy to recommend to everyone, especially to those who are new to sake. But, well... what is Edo?
