It is called "Nama Hashiroku Kioku Oke Junmai" (pure rice made from raw yeast and wooden vats). There is only one cup left! He served it to us. Shinsei-san never misses a drink. While enjoying the sake with my friend, we reminisced about the famous brand, "I asked my old boyfriend to leave some for me until we met again, but he drank it all! We enjoyed the sake while reminiscing about the famous brand (laugh).

The rice is Saga no Hana. My friend requested a dry, dry sake. It was dry, clean, and sharp, but not so light on the palate. It seems to disappear quickly.

I was told that the sake was brewed with 20-somethings in mind, though I am not a 20-something! I had it while laughing with my friend. The ginjo aroma is as expected. It is clear and refreshing on the palate, but has a strong umami flavor.

Three items of leftover matching. The owner of the restaurant served us "an odd kind of sake with the aroma of oak barrels. My friend described it as "the taste of panna cotta. It was like that. Sweet, dark, strong. It has an interesting dessert wine-like flavor. It was delicious.

The daiginjo I had earlier did not sound good, so if this one is not good, then either my health condition or the management of the restaurant may not be good enough, right? I ordered it as a touchstone (laugh). It was like a restaurant that also serves sake, and I only knew the brand, but it was unfiltered raw. It was delicious, so maybe Tatenogawa is simply not my favorite.

I ordered a bottle thinking that it was mellow and super dry. (laughs) The aroma comes quite a bit. It's interesting that the flavor comes through even though it's completely clear. I think it goes well with any kind of food. The more you drink it, the more you get used to it. It's interesting.

It has no habits, but the taste is strong and satisfying, and the aftertaste is clean. I paired it with a hotel dinner (Japanese cuisine) on New Year's Eve, and it did not interfere with the food. It was delicious.
