Founded in Kyoho 2, this sake brewery in Uonuma, Niigata celebrated its 300th anniversary not long ago. Whoa? I went to their website to check it out. It is said that they have been making light and delicious sake in Niigata, where light and dry sake is the mainstream. This is delicious. Today's entrées included firefly squid, pickled eggplant, and bonito tataki, and it went very well with the relatively light entrées.

I don't drink Kochi sake willingly (I like umami), but Drunken Whale! I have an image of Kochi's sake being mainly dry), but Drunken Whale! The label is cute and summery, so I just went for it (lol).
It has a light bitterness, but the taste is refreshing yet full and delicious. It went well with kiss tempura.
It is said to be sake brewed with rice and water from Sendai. It has quite an aroma. Smooth on the palate but with a robust flavor, it was the perfect match for the kakiage I had just ordered. Delicious!
For the last sake, my friend ordered a three-year aged Yamahai-brewed sake. It had a golden color from the aging process, and the mild and robust taste was very impressive.
The label reads Niida Shizen Shu. The description reads "no additive yeast (kurage yeast), 100% natural rice" and other particulars. I don't remember the details of the flavor, but I am sure it was easy to drink and tasty.
According to the label, SEE PINK ELEPHANTS means severe intoxication. Junmai Daiginjyo Nama sake. If it is this easy to drink at 16 degrees, you may indeed see pink elephants. My memory is getting a little suspect to describe the detailed flavor, but it was delicious. The label is a five, not a Z.
