Brewed entirely without pesticides, "Earth" is the most agriculturally focused of all the "Colors". The rice used to make "Earth" is Rikuu 132, which was born in Akita Prefecture during the Taisho era (1912-1926), and is derived from "Kame-no-o" and "Aikoku," two of the three major varieties of rice in Japan during the Meiji era (1868-1912). Hence, it also has the nickname "Aikoku" (meaning "love turtle"). This rice is also famous for being recommended for planting by Kenji Miyazawa, a poet and a devoted farmer. Because it is resistant to cold damage and historically proven to be suitable for pesticide-free cultivation, our own rice fields are mainly planted with this variety. It has already become one of the brewery's iconic sake rice varieties, along with "Koso-Shinko". It is a very hard rice, and its flavor is perfected after prolonged cold storage.

Izumokanba" is a sake flavored with ancient rice grown in the town. Tonight we had donuts🍩 and KM96 from Hachinohe Brewery! This sake has a perfect balance of sweetness and sourness! The rice used for the sake is Mashigura, grown by Mr. Kimura's father at his family's home in Yomogitamura, Aomori Prefecture. The rice is polished to 96% without polishing. Since only 4% of the rice is unpolished, it is less polished than the rice we eat on a daily basis. Kenta took over his father's rice and set himself a high hurdle as a brewer to challenge the ultra-low milling process. The Kimura father and son's thoughts and feelings are packed into this wine. A sip of the sake is followed by a gulp of sake. The taste brings to mind scenes of everyday evening drinking. For those who seek a sense of rice in their sake, this is the perfect bottle for you. The aroma and taste are characteristic of low-polished sake, and the simple, rustic character typical of sake made from rice can be felt. It also has a slightly refreshing, plump, umami taste that will make you feel at ease. The acidity is also very strong, which makes it a good accompaniment to food.
