Rice and Grapes (TAMESHIOKE), the first in a series of experimental rice and agave sake series, was officially released as a CRAFT series in December 2022.
This craft saké is made by fermenting the Koshu variety of grapes, rice and koji together.
This lot was made into a slightly sparkling sparkling type with secondary fermentation in the bottle.
By combining winemaking, where the quality of the grapes is extremely important, with sake making, which has many technical variables, we aimed to raise the potential of the grapes with the rice and koji sake making techniques that the Japanese have cultivated.
The flavors of sake and wine are fused together to create a saké that coexists with the flavors of both? wine? grape wine? It is a saké or wine?
