We're at Takano's, the famous sake bar right next to Otaru Station✨! It's been a very, very long time since I've had a drink outside! It was my first time to try Kaku-uchi! I was a bit confused by the system. I got the recommended sake, Oze no Yukidoke! I would have liked a peach nigori, but this is it, The melted snow water was blended into the sake, giving it a refreshing and clean taste! This one is definitely a girl's favorite, too! The tsumami is also inexpensive, a little over 2,000 yen for a full meal! It's amazing, isn't it? The high quality of their sake makes them stand out from other breweries in the prefecture. They have invested aggressively in facilities, such as in-house rice polishing, the number of thermal tanks they have, and the introduction of plate heaters for fire-roasting, which I hear is outstanding for a brewery in the prefecture. They also use only rice suitable for sake brewing that is purchased directly from a reputable production organization.

I went to Saga Shoten in Kushiro ✨. I went to Saga Shoten because they introduced it to me before! I was so excited to see so many sake that I was curious about! The limited straight kumi! We carefully bottled each bottle without sparing any effort to keep it fresh. Freshly pressed sake contains fine gas. In order to preserve the freshness of the sake, we bottle the new sake in a container called a "kameguchi". This is the third in the Machida Shuzo "Naokumi" series! Mixseed" is a coined word that combines "Mix (mix)" and "Seed (seed). Seed refers to the young brewers at Hachinohe Brewery. Like seeds that are about to sprout, young brewers with great potential have joined forces to create the sake they want to express themselves. This is what "Mixseed" is all about. In fiscal year 2022, four brewers challenged the best four from the in-house competition! I want to try a unique nigori sake! In response to a request from within the company, Mr. Ishibashi created "ShAKE. It is a dry nigori sake. I don't like nigori sake because it is too sweet. For those who are not so fond of nigori sake, this is the sake you should definitely try. The rice used for "ShAKE" is Aomori Prefecture's "Hanabukiyuki" rice suitable for sake brewing, grown in the company's own rice fields. Mr. Ishibashi grows the rice himself and brews it with his own hands. This is the consistent brewing process of Shinya Ishibashi's wholehearted devotion!
