Umeshu (plum wine)
We want to make the best plum wine that does not resemble any existing plum wine. Daishichi's first liqueur
The first liqueur, "Namo Hashi Umeshu," was born with the highest of hopes. We wanted to ensure that we always had a plentiful supply of the highest quality plums, so we ordered large Nanko plums from Wakayama Prefecture, the main production center of ume. The sake used is, of course, not the commonly used white liquor,
The sake used must of course not be the commonly used white liquor, but sake made from sake brewed using the "ikuhashi-zukuri" method.
We tried all kinds of sake on a zero-based basis,
The sake that was chosen was the "umami" sake
The sake chosen was Junmai Namahashiroshi sake, which can be described as the umami taste.
This umami gently envelops the acidity of the plums without the need for excessive sugar,
The harmony was mellow without the need for excessive sugar.
As soon as it appeared on the market, "Namaishige Umeshu" won all the first prizes in liqueur-related competitions,
It was quickly adopted by Michelin-starred restaurants around the world.
