Today is another fun day at Izakaya. We started with a comparison of new sake and 10 year old sake. The new sake has a sweet aroma. The new sake has a sweet aroma, and when you put it in your mouth, the sweetness and the delicious taste of rice spread in your mouth. The old sake smells like old sake, but when you drink it, you can feel the calm atmosphere of old age.

Tonight, we are at a neighborhood izakaya. Here is the start. I wonder if this is the first brand I've encountered. The aroma is sweet and nice, and my expectations are high. When you put it in your mouth, you can taste the mixture of the firm sweetness and the fullness of the rice. It is exactly like that. There is no reason why it does not go well with the spicy simmered vegetables served with the entrée. Both the simmered dish and sake are delicious. You can't stop eating salted fish from Kesennuma. The barracuda (pike) is a perfect match, bringing out the sweetness of the fish and keeping it sharp! When paired with yakisuri, it turns into a refreshing sake, which is also good! It looks like it's only available at retailers, but I wonder if I can buy it someday.

I was attracted to Omachi and purchased this one to accompany me this evening. When the bottle is opened, it has a fresh and sweet aroma. The fruity sweetness is complemented by the acidity and bitterness. The fruity sweetness is complemented by sourness and bitterness! After the komatsuna and kiriboshi-daikon with salted sesame oil, the sharpness of the sake is pleasant! It's also a nice crisp way to wash down the sweetness of the sea bream arabesque. The stir-fried tofu/konnyaku/tomato dish brings out the sweetness and is also delicious. We enjoyed not only the back side but also the front side!

A special bottle to cheer myself up when I'm feeling weak from a bad cold. It's a shame for a stuffy nose, but it's all I have! First of all, the pun on the back label made me smile. When the bottle is opened, the aroma is fresh and gorgeous. When you put it in your mouth, you will feel a tingling and a weak sizzling sensation on the tip of your tongue. My first impression was that the acidity was emphasized in the front. In the second sip, the sweetness and fullness of the rice are felt in the mouth, followed by the sourness of the fruit, and the bitterness rounds out the end. After soaked bean sprouts with vinegar and sesame seeds, the sweetness and gorgeousness of this dish is irresistibly delicious! The bitterness of grated nameko mushrooms mellows out the aftertaste of the sake, which is also wonderful. The main course was a fried food party bought at a butcher shop in town. After the fried oysters, it was very refreshing. The chicken cutlet is clean, leaving only the sweetness. The butcher's potato croquettes themselves are delicious, but they also bring out the flavor of the sake. As I said, the sake is more enjoyable than I had expected!

Tonight's accompaniment is a bottle brewed with Akaban Omachi. When the bottle is opened, it has a juicy, delicious aroma that makes you drool. When you put it in your mouth, it flows down the back of your throat without any resistance. When swallowed, the muscat-like aroma tickles the nostrils, and the well-balanced acidity is like fruit juice. It may sound sweet, but the taste is clean and dry. This is delicious! To accompany the sake, I served grilled yellowtail kama (yellowtail kama) cut from a whole yellowtail that I received as a tax payment from my hometown. The fruitiness of the sake is enhanced and the taste is doubled. When paired with fried Brussels sprouts and sausage, the bitterness of the Brussels sprouts counteracted the slight bitterness of the sake, making it very good! The pickled greens are salty-sour, which brings out the sweetness of the sake. It also goes well with sake. It is delicious enough as it is, and the characteristics change with the accompaniment, which is wonderful!

Tonight's accompaniment is a rare kijo sake. An after-dinner smoke. When the bottle is opened, it is a ripe pear with a hint of cemedine. I normally don't like it, but when I put it in my mouth, it has a delicious honey sweetness! Swallowing it down, I get a whiff of sourness, and it's soooo good. I'm sure I'll be able to sleep with wonderful dreams after drinking this.

Tonight's accompaniment is a bottle of this one, which was purchased on order. This sake is brewed with peach yeast. When the bottle is opened, the aroma is a little organic, but slightly sweet. The first impression on the palate is that it is very thick! Immediately after the sweetness is felt, a spiciness follows. The bitterness also lingers on the palate, so it would be fun to pair it with food. The accompaniment is a burger famous for its charbroiled patty. The sweetness of the sake is enhanced and tastes great. The bitter taste of sake works well with the spiced convenience store fried chicken to refresh the palate. It's good. It's a great drink that accompanies the junky mood and doesn't let you down. Next up was our homemade smoked salmon. It took a few days to complete this masterpiece. Like the charbroiled beef I mentioned earlier, I wonder if this drink goes well with smoky. After the camembert/salmon, the salty and bitter taste of the cheese is added and the balanced sweetness of the liquor spreads out and is great! It was a fun encounter.

Since I have completed my mini sobriety break for my physical exam, my favorite sake, Tasake, is on the menu tonight. And I did my best with the gastroscopy! When I open the bottle, it looks like a ripe melon? The first sip is spicy! In the second sip, sweetness caresses the tongue, and in the third sip, you feel the unique sourness of Yamahai. As you continue to drink, everything becomes balanced and you can say, "This is delicious. It is very interesting. The first snack was homemade smoked oysters marinated in olive oil. This is delicious! The sweetness of the sake is brought out, but the sharpness is maintained, so you can't stop drinking! The marinated vegetables and shrimp are good, making the sake a clean, sweet mass! There is no reason why Gifu's red turnip pickled lactobacillus and Yamahai can't go together. A sweet and tasty sake... The nutty taste of Norvegia cheese turns the sake into a refreshingly watery one, which is also good. This sake is a lot of fun, with many faces to enjoy!

It's been a while since I've posted anything. It's not that I haven't been drinking. When I opened the bottle, there was a slight aroma of ripe pears. Strangely enough, I felt the acidity at first, and when I swallowed it, the sweetness remained on my tongue, and I also felt the bitterness at the back. A little organic. After the spinach with sesame dressing, it turns into a refreshingly dry wine. It became very easy to drink. With sashimi konnyaku, the sweetness of the vinegared miso also brings out the sweetness of the sake, which is also a nice touch. Potato salad with natto stuffed with fresh green peppers pleasantly enhances the organic flavor, which I usually don't like. How could it not go well with the grilled head of sea bream (cheap and tasty)? Salt makes sake taste so good, doesn't it? It resets the sweet and spicy taste of the simmered silver cod so nicely that you can't stop drinking. Even if you don't like it as it is, sake is fun to drink because it can be transformed by the accompaniments!

The matured sake is laid down further for 3 years. Let's see what kind of encounter we will have. When the bottle is opened, the aroma is clean and refreshing. In the mouth, you feel sweetness on the tip of the tongue, followed by a complex flavor that is hard to describe, and finishes with a weak bitterness. It's a complex flavor. Very mellow and delicious. It goes well with the sweet flavor of the pork radish. The complex flavor is maintained, but the refreshing feeling is enhanced, so you can't stop drinking. Adding poppy seeds to the daikon gives the sake a sweetness that is also good. The moderate aged aroma gives it a Western sake-like flavor, so cheese is added. The savory flavor of the crackers, the saltiness of the cheese, and the sweetness of the cream will increase the potential of the sake. Fun! When paired with smoked salmon, the sweetness of the alcohol lingers on the upper jaw, a strange sensation. It was a wonderful sake with many different faces.

I bought it in early spring, and following the advice "I wonder if it's open yet", I realized I let it sit too long. Upon opening the bottle, there was a faintly sweet aroma. When you put it in your mouth, it has a slight effervescence. You can feel the umami of the rice with a gusto. The bitterness that follows the sweetness balances it out and makes it delicious! It is cold today, so we had sesame soy milk hot pot. The slightly sweet flavor is a perfect match for the sake. I can't help but drink it smoothly. Adding shichimi (seven spice) and drinking it after the spiciness is very refreshing, which is also good. It is a wonderful sake!

Here's a bottle for you tonight...brewed with 22 year old rice and aged until this year? It seems to be different from "Shiboritate," doesn't it? When the bottle is opened, it has a faintly sweet aroma. In the mouth, it tastes quite strong. It has a velvety texture that clings to the tongue. The first taste is of sugar water, but it quickly wears off and leaves a clean aftertaste. It is extremely delicious! When paired with steamed vegetables with plum sauce, the refreshing sweetness stands out and becomes even more delicious. The main dish was the ekiben tendon we bought at Shin-Yokohama Station. The sweet sauce complemented the sharpness of the sake, which was also wonderful♪ It was a delicious sake that was easy to drink.

I bought this bottle after visiting a sake brewery when I was in Gero Onsen. I bought it without tasting it, but we'll see. When I opened the bottle, it had a nice sweet aroma. In the mouth, it is dry contrary to the aroma. After the sweetness on the surface of the tongue, the acidity follows, leaving a bitter taste in the throat. It is not a normal expression, but it is not bad. It was getting cold, so I had a pot of ramen noodles from Iida Shoten. After this, it has a fresh aroma like an apple, and the sweetness increases and the bitterness decreases, making it a good match! It is interesting that the sake asserts itself as much as the strong flavor of the nabe. What a fun marriage!

Here is a bottle to accompany this evening. When the bottle is opened, it has a flowery ginjo aroma. In the mouth, it has the sweetness of apples filled with honey. The sweetness clings to the tongue, but the acidity neutralizes it and it goes down your throat nicely. Today is a time sale side dish day. When paired with fried quail egg, the oil flows nicely. The fried burdock root is sweetly seasoned, which refreshes the sake and creates an endless loop. The main course is sushi. This rounded out the entire sake and made it very easy to drink. I enjoyed drinking again this evening!

Rabenten appears for the first time in a long time. I wonder if this is the first appearance of Dewanosato. When the bottle is opened, it has a sweet fruit ginjo aroma. In the mouth, the sweetness is felt firmly at first, but then it is cut off sharply. A slightly bitter taste lingers in the throat. The salad with balsamic vinaigrette dressing is very nice, reducing the bitterness of the sake. The sour pickled red turnips bring out the fruitiness of the dish. The main dish is herring meuniere. The combination of this and the herring meuniere gives it a medicinal flavor. I think it is not the best match. And yet, when you take a bite of the lemon used in the dish and drink it, it is truly a fruit juice. It is refreshing, gorgeous, and delicious! The original flavor of this sake is complex, so the taste varies greatly depending on which parts are drawn out. It is a fun sake.

Tonight is my favorite sake, Tasake-sama. When the bottle is opened, it has a gorgeous ginjo aroma. It makes me drool. In the mouth, it tastes sweet and sour like fresh fruit. Delicious! ♪ For dinner, we had Tenka Ippin nabe, which I was curious about on TV. The aroma of this hot pot is quite unique. After a dish with a strong character, the refreshing sweetness stands out, and it resets the inside of the mouth, so it goes well with it. I would like to try it with other dishes, but I have almost finished drinking it.

Momoten, a spring drink. It is too cherished and autumn is almost over. When the bottle is opened, the aroma is full and complex. First, a little of the supernatant. When you put it in your mouth, you feel a gaseous sensation that makes the tip of your tongue tingle. Perhaps that is why it feels so spicy. When swallowed, the acidity lingers in the throat. Next, it is lightly shaken and lightly nigori. The sweetness is felt at first, and the sharpness remains the same. I didn't know the taste could be so different! The sweetness is even more pronounced when paired with the mekabu chilled tofu. The octopus/avocado wasabi soy sauce has a weak bitterness that mellows out the aftertaste of the sake, making it a good match! The main dish was grilled yellowtail kama with salt.
