I think this is the first time I've had it at home, and this is my companion for tonight. When the bottle is opened, it has a sweet, gorgeous ginjo aroma. When you take it into your mouth, a firm sweetness spreads in your mouth, and when you swallow it, bitterness and sourness linger in your throat. It is delicious. Chicken with black vinegar sauce is quite easy to drink because it mellows out the sweetness of the sake and reduces the bitterness and acidity. It is also a good match with Chinese fried eggplant, as it mellows out the whole dish.
