I purchased this bottle on a trip. The oldest brewery in Miyagi Prefecture brewed this bottle for a limited edition sake shop. When I opened the bottle, there was a slight organic aroma. When you open the bottle, it has a slight organic aroma, and in the mouth it has a dry taste that you would not expect from a sake with a sake rating of -3. It has a weak sweetness followed by a strong acidity. When paired with dishes using vinegar or simmered dishes, the sweetness becomes stronger and the acidity weakens, making it easier to drink. Rare(?)! I enjoyed this sake!
