A gift from a while ago.
It's a clear and dry wine.
I drank it at room temperature, but next time I would like to try it chilled. I heard it can also be warmed up.
We had it with boiled mebaru fish.
I found and bought this nigorizake from Hakkaisan.
It has a sweetness like nigorizake, but it's really Hakkaisan!
It has a good balance!
I can drink this one by itself!
I wanted to mix the lees evenly, so I shook the bottle lightly and uncorked it, and it spilled all over the place!
As soon as I uncorked it, it popped.
I think I understand why the owner of the shop where I bought it said that it was fermenting inside. A light, tangy, micro-fermentation. Delicious.
Requires refrigeration. Rice polishing ratio 55%.
This sake has the label of the gold medal winner of the sake award 2020.
The aroma and flavor are strong, but it is easy to drink.
Shinomine Moromi Junmai Ginjo - Active Nigorizake Nama Genshu
Stimulation of carbon dioxide gas and sweet taste. The rice polishing ratio is 50%.
It is said to be a sake with a high gas pressure, and there is a warning about explosions. I opened the bottle with trepidation, but was relieved to find no problems.
Sake aged in Scotch whisky Chivas Regal barrels.
The aroma is sake, but the aftertaste of whisky remains. You may feel more whiskey-like after a while. It's an interesting sake.
