I bought this sake at a shop in Maizuru called Sato's Sake. Despite the name, they also have a lot of sake, and I wanted to buy some Ine Mankaichi when I dropped by. It is a rare sake with the name of the shop on the label! I believe they use "Shukyu" sake rice from Kyoto. It doesn't have a strong aroma, just a standard sake taste.

Akigeshiki produced in Kagawa prefecture According to the person at the shop, it was sold about two weeks earlier than usual this year. For an unfiltered, unpasteurized sake, it's refreshing in a good way, but it has a strong flavor that goes well with lightly seasoned dishes. The color is crystal clear.

This is a sake made from Chiba Prefecture's So-no-Mai polished to 29%. But the price is less than 3000 yen! As it is highly polished, there is no miscellaneous taste at all, and a soft sweet taste spreads the moment you drink it. The aftertaste has a slight sourness and disappears quickly. It's one of the best sake I've ever had!

It has an aroma that is typical of Junmai-shu, but the aroma is not too strong, and it is easy to drink even for those who don't like Junmai-shu. I want to drink it again because it can be used for all kinds of purposes.

Very refreshing when drunk at room temperature. It has a slight bitterness. If you heat it up, as the label says, it becomes very gentle with a sweet aroma. The sake rice is Tamasakae. The rice polishing ratio is 50%, but the label says Junmai Ginjo. The acidity is 2.0 and the sake level is +11. The alcohol content is high at 18.8, but the taste is not overpowering, and the flavor is delicious.

This is the one that was recommended to me when I asked the shop for a sake suitable for heating up. As the name suggests, it has a sweetness that spreads when it's heated. This sake is made from 100% Kinuhikari, an edible rice produced in Ohara, Kyoto. The aroma is very sweet. It has a banana-like aroma. The mouthfeel is so clean and easy to drink that it is hard to distinguish from sake rice. If you didn't know it was made from Kinuhikari, you would probably just drink it as a Junmai Daiginjo.

At the direct sales counter, they bottle the sake right in front of you from the tap, and sell it by weight. There were three sizes of bottles: 300, 720, and 1 square. The aroma is fruity, but the mouthfeel is strong and grainy, as is the case with 17-degree unpasteurized sake. When I drank it with hot water (7 parts undiluted sake and 3 parts boiling water), the sweetness came out and the atmosphere changed a lot. A side note The hormone at a nearby butcher shop that serves fresh hormone was also delicious.

I'm having yellowtail shabu today, so I'll have another bottle. There is no indication on the label, but I think it was a Junmai Daiginjo. It's very tasty and has the characteristic of Daishinshu that it goes well with any meal. Maybe it's because of the good water in Nagano, but there were many sakes that were really refreshing to drink, so I want to go back and buy more!

First of all, you will be surprised by the surprisingly sweet aroma, which is just like a melon, but when you drink it, you will taste the taste of sake! It's not too sweet, but it has a good mouthfeel, making it a very good sake for a meal. My personal impression is that it has a sweetness that is more suited to meat dishes than sashimi. It's a very satisfying sake that I can't believe is in this price range.

I was intrigued to know that the sake is made from Koshihikari rice, which was selected as the only rice terrace in Shiga Prefecture, and was selected as one of the "100 best rice terraces in Japan". It has a slight bitterness, but it has a very fruity sweetness despite being an edible rice sake. Koshihikari seems to be more of a food poisoning type of sake, but it's better suited to be drunk on its own.
