We were also given a set to compare drinks and a few snacks.
For purchase, we took home a bottle of Kinuhikari Orikarami, which is not included in the paid tasting.
Here are my impressions of the paid tasting.
Junmai Daiginjo Oorigarami Aizan
Milky and full of umami, but not too sweet.
It can be enjoyed as a food sake.
Junmai Daiginjo Oorigarami Betsuatsurae Yamadanishiki
A clear, old-fashioned sake with a strong umami flavor.
It also has a strong umami.
The lingering aftertaste is refreshingly bitter and well-balanced.
Junmai Ginjo Yamadanishiki
A classic sake that has been around since the beginning.
It has a smooth mouthfeel.
It has a soft sweetness and a salty taste with a soft lingering bitterness.
A sake that is delicious every time you drink it without giving up.
Special Junmai Unfiltered Nama Sake
At room temperature.
The taste in the mouth is very robust.
A nice spiciness from the firm mouthfeel that only junmai sake can have.
The second half has a refreshing citrus aroma, sweetness, and a soft lingering bitterness.
The rice used to make this sake is Kinuhikari.
When you put it in your mouth, the sweetness and bitterness give way to umami. It is clean and fruity.
The lingering aftertaste is a soft bitterness that is common to all of the wines we have had today, and I felt it was exquisitely balanced.
It has been a while since I have had Aozora, but it was delicious.

100% Miyamanishiki from Nagano Prefecture
The aroma is faintly sweet.
The color is clear and has a light yellow tinge. Beautiful color.
The mouthfeel is mild, as is typical of Fushimi water.
When you put it in your mouth, it has a distinct sweetness. It has a refreshing sweetness in the style of green apple.
The sweetness is more noticeable than that of Yamadanishiki Aozora. Is it the difference of sake rice ❓🤔.
Sourness appears in the aftertaste and changes from mild to strong. The sweetness does not remain, and the cleanliness is good.
You can enjoy the mildness of the water and sweetness and the strength of the acidity 🍶.

We compared 3 x 50ml sakes, limited to weekdays only 😊.
All the sakes are very refreshing. The sweet, umami, and acidic flavors are rather strong and delicate. I don't know if I would want to drink more 70ml x 2 cups after drinking the sake. But there was a Junmai Daiginjo Aizan ❤️ and a Junmai Daiginjo Nama Shu Oorigarami Aizan ❤️, so...,
Batsurai means so-called "blame". They take the trouble to bottle the sake for blaming.
Of course, I bought a bottle to get the sake seal, but the price for a 500 ml bottle is so-so (euphemism), isn't it? Why 500 ml?

I have always wanted to try drinking at the brewery, but when I had a chance to visit the south side of Kyoto, I thought, "I have to extend my trip! I had a chance to visit the south side of Kyoto, so I decided to go there.
Miyamanishiki produced in Nagano Prefecture, using No.7 yeast. Nagano Nagano.
The aroma of peach and creaminess on the top of the nose is similar to that of Kinuhikari.
The taste is very gentle and fluffy without being too assertive. After the previous Yamadaho, it is a little lacking.
100% Yamada-ho from Hyogo Prefecture is used.
It has a very rich flavor and can be enjoyed in small doses.
It has a deep, full-bodied flavor with a delicious acidity.

This sake is made from 100% Kinuhikari, an edible rice produced in Ohara, Kyoto.
The aroma is very sweet. It has a banana-like aroma.
The mouthfeel is so clean and easy to drink that it is hard to distinguish from sake rice.
If you didn't know it was made from Kinuhikari, you would probably just drink it as a Junmai Daiginjo.
