Aromatic and dry. I am not usually a drinker, but I can drink this easily. If you drink it chilled in a sake bowl, it becomes lighter and you can feel the sweetness first and it finishes well. It can be served with simmered dishes, sashimi, fried food, etc. 😊.

The sake bowl was invented to find the best vessel for drinking sake. When we compared the taste of sansho in a wine glass and a sake bowl at Tenshudo, the taste was totally different. The taste is more complex and lighter. It is too delicious! I couldn't help but buy it along with the Sansho. The moderate acidity, gassiness, and bitterness are the best.

It is easy to drink with a gentle sweetness, a hint of acidity and bitterness. As the temperature changes from chilled to room temperature, the sweetness increases and its character comes out. It is most comfortable to drink it with a sake cup.

Modern Yamahai, low alcohol...I bought it because I was curious about so many things. This is delicious! It's gassy and fresh, with a moderate sweetness and just the right amount of acidity. It's a great food sake that goes well with anything if you chill it quickly and drink it in a wine glass 😆 Is this Yamahai? This is a new genre!

Aizan version of Kangiku. It has a good gasiness, juicy and fresh taste. I like the sweetness of Aizan. It is not too sweet and has a good balance of acidity and bitterness, so it can be drunk as a mealtime sake. Thank you very much for your kindness!

A light nigori from the Sawaya-Matsumoto series that tastes great no matter what you drink. The balance of light gassiness and sweet/tart acidity is superb! There is a hint of bitterness after finishing the drink that keeps the cup going. I look forward to this time of year again next year 😊.

At KURAGE in Miyazaki City's Izakaya Sancho where the fish is delicious. All sake is served in tin cups. Fruity and juicy flavor. A hint of apple. An excellent food sake that cuts through the fat of grilled fish.

Craft saké brewed without being confined to the category of sake. This is a new genre. It is delicious both chilled and at room temperature. The bitterness of the hops, the balance of sweetness and sourness, and the deep taste of grain. Grilled fish, cheese, rich soups... many foods come to mind that I would like to pair with this saké.

I've been drinking a lot of ogara-mi lately😊I was curious about Eiko Fuji for a while and bought it from Isego Honten's online store! It has an apple-like sweetness, acidity, and rice flavor. Oh, it is delicious. I think I liked it best chilled in a glass of junmai sake.

It is strange to buy sake brewed in Tokyo at a sake shop in Miyazaki. The sweetness and umami of the rice come to the fore, and the taste is rich, but the bitter acidity makes it crisp and clear. It is good as a food sake. Delicious 😋.

Koei Kiku Shuzo has landed in Miyazaki! I immediately made a trip to Miyakonojo to purchase it. Aizan's lightly nigori (cloudy) version. Yum! The unique sweetness of Aizan and the acidity typical of Koeikiku are effective. When nigori is mixed in, the rice flavor is enhanced, making it even more delicious. I could enjoy the changes even after about a week has passed 😊.

The Yamamoto series is great because it can be enjoyed in different seasons. This is one of our favorites, brewed with yeast No. 6. It has a grape-like acidity and a heavy body, but is crisp and has a clean aftertaste. Excellent as a food sake!

The number 807 means 80% rice polishing ratio and Association No. 7 yeast. It has a pleasant balance of sweetness and bitterness. I like the complexity that comes from not over-polishing the rice.

This is the second of three nigori bottles I purchased. This is the first time for me to drink Sharaku Oorigarami. The bottle was opened with a cheerful pop. It was shwashy and had an elegant sweetness and sharpness. This is a good sake 😊. I chilled it and drank it in a wine glass and it was gone quickly.

This is the first of three nigori bottles purchased at the Hidaka Sake Shop in Miyazaki. The top clear layer has a clean citrus flavor, and when mixed with the rest of the bottle, the umami spreads out. The aftertaste is crisp and easy to pair with meals 😆.

If junmai sake, a year-round product, is an apple, this is a sake full of the fruitiness of ripe apples. This is the first time I have tasted a sake rice called Hwasoi. Hatsusen is still delicious. I bought it at Saisho Sake Shop in Miyakonojo, attracted by its strawberry-like aroma. When I opened the bottle, I heard a nice sound. It really is sour and sweet like biting into a strawberry! I'll be happy if my first brand is a winner with one more bottle 😆.

Aged one year in a cool dark place covered with newspaper. It has a slightly yellowish color and a mellow flavor. It is best served lukewarm to hot. It tastes great with oden! The change in taste is one of the best parts of sake.
