Junmai Daiginjyo Unrefiltered Flat Polishing
The Junmai Daiginjo was delicious, with a sweetness that was fully expressed with little cloying taste. The assemblage is a blend of Omachi, Yamadanishiki, and Aizan, and is sweet and crisp. The flat polished rice is junmai (pure rice), but the sweetness was well expressed and easy to drink. The Junmai Daiginjo was also tasted without any accompaniments, so I felt that the Junmai Daiginjo was delicious.
