I visited Araiya Brewery for an in-store tasting of Sekiya Brewery's sake, which I couldn't taste because I had to drive afterwards 😅.
Sake that has been aged for only one year and bottled.
I tried to hold off on opening it until New Year's, but my fridge was at capacity 🤣🤣 so I opened it 😅.
Well, the aroma is green apple 🍏, soft mouthfeel, fresh sweetness and delicious flavor with a sourness that slowly builds up ✨.
On the second day, I think the sweetness has deepened. I've read that it's recommended to cool it down a little bit, so if you let it sit for a while after pouring it, the sweetness and umami will deepen and become more intense ✨.

When I had the Gin before, it had a strong aged taste, which is unique to old sake, but the Sora has a fresh taste 😳.

I was wondering 🤔 why it was so fresh even though it's aged for a year 😊 but I think I just chilled it too much. When I raised the temperature a little, the freshness went away and the sweetness and richness came out ✨.
