Tasting at a brewery event hosted by a liquor store.
We had the Ichinen Fudo series from the Sekiya Sake Brewery booth, which we drank during our trip to Nagoya.
Ichinenfudo unfiltered Shiboritate 55% polished rice
Ichinenfudo Special Junmai Tajima-strength 55% polished rice
Ichinenfudo Sparkling 60% polished rice
I used to have an image of dry Houraisen, but both unfiltered Shiboritate and special junmai were easy to drink with a good balance of sweetness and umami. The sparkling wine was served as a toast to a meal, and it was light and mellow, just like a sweet white wine.
