It has been a while since I visited a sake brewery. Kumazawa Sake Brewery in Kanagawa Prefecture The only sake brewery in Shonan that has been in business for 150 years. They are also making efforts to produce local rice with local rice farmers, and their various restaurants and facilities are very nice. This time, we had a sake marriage at the Japanese restaurant Tensei. Tenqing Series The Amano 4 series expresses the clear blue of the sky seen through the clouds after the rain. We were happy to drink a variety of sakes with dishes using sakekasu (sake lees). The Amegaten Ao is made with up to 40% Yamadanishiki, and it has a refreshing yet elegant flavor that went well with the dishes.

When opened, it made a popping sound and was quite gassy. After a few days, the flavor of the rice became more robust. It went well with the salty taste of yamame.

Buyu Cycle Ogawa is a new sake concept that combines the natural energy of microbial cycles with locally produced, locally consumed sake. The sake was started by a toji (master brewer) who is also a cyclist, and the label was created by a Ghibli movie animator who is one of the most avid cyclists in the industry. It has a freshness that makes you feel as if you could ride a bicycle and ride off into the wind, and it is easy to drink for a pure sake. I drank it with grilled magnolia leaves, but I think it would have been better with sashimi or the beginning of a meal.

It is located on Horaiji Mountain, which is associated with Tokugawa Ieyasu, and is named after Horai, a Chinese ideal world. They also grow their own rice and are particular about it. Among other things, they are popular as wedding gifts because they can be custom-made in taste and design. It had a gorgeous taste. It went well with the new bamboo shoots.

I went to visit the Sagaminada Sake Brewery. It was a 30-minute bus ride from Hashimoto Station, and the brewery was tucked away in the mountains beyond the Shiroyama Dam. The brewery was a quaint one that looked like it had been there since the Edo period. Since it was a weekday, we were the only visitors, and we were given a slow and detailed explanation of the brewery. The brewery is family-run and produces a small amount of sake, so they seem to be particular about bottling and storage. We were allowed to taste 11 different kinds of wine for the tour fee only. Yamadanishiki, Omachi rice, Miyamanishiki, and various other rice varieties were available. All of them were refreshing and easy to drink. They were not gorgeous with aroma, but they seemed to go well with any dishes.

Sake Jyushiyo was born in the early Heisei period (early 20th century). It is a mellow sweet sake with a fruity aroma, the exact opposite of the light, dry sake that has become the mainstream. It is a brand that has led the new era of Japanese sake. The reason why Jyushidai is called a "fantastic sake" is that it is produced in very small quantities and has a premium value due to its meticulous manufacturing process. It has an aroma of white peaches and melon, a fruity, refreshingly sour and sweet taste, and a clear, crisp and refreshing taste. As expected of Jyushiyo! We drank it in a wine glass while enjoying the aroma. The appetizers, yellowtail sushi, and sweet beef were all outstanding. It was a blissful time.

The brand name "Sensuke" was named after the founder, Mr. Sensuke Izumi. It was easy to drink, with a gaseous and cloudy taste, and the umami of rice, without being too sweet.

Junmai Daiginjo from Hamachidori A limited edition sake made by Hamachidori Shuzo in Iwate Prefecture for the Ikesu no Taisho. The brewery also makes a light dry sake, but the Junmai Tornado was a delicious sake with a full-bodied flavor and depth. There were also many non-major sakes, all of which were draft sake.

I went to visit the brewery of Ozawa Sake Brewery in Ome, Tokyo. The brewery is a historical building that is over 300 years old. It was a theme park with a café, a kaiseki restaurant, an art museum, and many other attractions. It was a warm day, and we were able to enjoy a relaxing sake tasting while viewing the mountain stream and the scenery. We tasted three kinds of sake: Junmai Honjishu, Tokubetsu Junmai Sawanoi, and Daiginjo Sawanoi. It was like sake tasting on the high street. After the sake brewery tour, we had Soten and Shin Shibori. This one was fresh. I had a variety of sake, but I checked in with Soten, which was my favorite. I would like to go back when the leaves change color.

The oldest brewery in Yamaguchi Prefecture The name "Yumejaku" is derived from a sparrow, which is revered as a symbol of good harvest and a messenger of God. Yumejaku, a collaboration with a venture company in Yamaguchi, was sold in Dubai for 600,000 yen per bottle and became a hot topic of conversation. It has received high acclaim both at home and abroad, including being ranked number one in the world in the sake category by the International Wine Council (IWC). The production fee is very small, so it seems to be a very valuable sake. It was fresh and juicy, with a nice umami and acidity, and a clean aftertaste. It tasted like Jyushiyo and was very delicious.

This limited edition sake is only available at places that have a contract with Mochizuki Shoten. Ame-Go-Tsuki is a brand of sake that goes well with oysters from Kure City, Hiroshima Prefecture. The refreshing taste was just like "Amego Tsuki". It was a perfect match with sashimi. It was great with the salt from grilled Spanish mackerel straw.

A series of red dragonfly motifs, overwintered eggs and a snowman looking forward to spring, and the eggs are wintering well under the snowman. Very cute label. It seemed to be a little bit day-old and I couldn't feel much gas, but the fresh fruity taste gave it an aperitif-like feeling.

The oldest brewery in Shizuoka Prefecture The 31st oldest brewery in Japan. The bottle also won the Good Design Award! White ceramic bottle with red label! Very stylish but cute. Okabe-cho, one of the three best Gyokuro breweries, expresses the delicate depth of Gyokuro-like flavor, and Hyogetsu is named after a local tea house! It is like a refreshing white wine and was served in a wine glass. It was gorgeous, but also refreshing, and went perfectly with New Year's osechi dishes. The bottle and case are stylish and would make a great gift. It was a gift for me too!
