I haven't had a flax cat in about two years. I'm not a big fan of the citric acidity, so I've been avoiding it. The first sip was sour! It's the most sour sake I've ever had! Behind the sourness, there is a strong umami and an elegant sweetness. It's very delicious, but I'm not good at sour sake. On the way back from fishing in Sotobo, I found a brewery I didn't know about, so I visited it! I talked to the brewer and bought two bottles, one that he recommended and one that I personally liked. Buy at Mr. Revolution I've been wanting to visit this shop ever since I started visiting liquor stores. I told them what I liked, and they left it completely up to me to choose. It seems to be a 1 year old sake from R1BY! Cold sake The smell is a little bit aged and mellow. When you put it in your mouth, a unique sweetness comes out first. Then, it has a rich taste of umami and sourness mixed together. The atmosphere is almost as if you were eating Japanese sweets. This is an interesting sake. We paired it with octopus sashimi, but it would be better to pair it with more dense sake snacks. I've never been a fan of kijoshu because it's too sweet, but I happened to find it on sale and I'd never had yonotori, so I bought it. Even so, I hesitated to open the bottle for about six months, so I left it refrigerated. Cold sake Fruity and mild aroma Like pear or plum wine? When I put it in my mouth, the fruitiness spread at once. Unlike other Kijoshu, it has more acidity and not so much sweetness. It is a little thin and easy to drink. The refreshing sourness and sweetness are addictive, as if you were biting into a high-grade fruit. The aftertaste has a unique feeling of Shinsei or No.6 yeast. It's hard to explain... I paired it with Neapolitan, and the pairing with the acidity of the tomato was wonderful! This is delicious! I feel like I've found a new drink! I buy Shinsei here and there if I can find it, but I've never actually liked it that much... I mean, I didn't like the heated popularity, the difficulty in buying it, and the price hike due to resale. I thought there are other good sakes that are easy to buy. But maybe I was wrong about that. This is the only one that's similar and different.
