I visited a liquor store I've always wanted to visit for the first time, and bought it as recommended! I didn't know this sake at all, but it was so minor that there was no brand name registered? I tried to register the brand name, but I'm sorry if it's wrong. Chilled It has a strong aroma of maturity. It has a smooth mouthfeel with a strong acidity and lots of umami. It is quite sweet and the bitterness is slight. The acidity is effective and the aftertaste is refreshing. Warmed up The mellowness has become even stronger, and it has become very slippery. This may be the strongest torochiere ever! The flavor exploded and the richness was amazing! This is definitely the perfect accompaniment for a thick stew! Otherwise, it will defeat the snacks! I like it a lot! But it's too full-bodied for me to keep drinking it. One of several kinds might be good. But the impact of this sake will take it all away! In terms of atmosphere, it has an impact similar to the Kamisugi Life Theater in Aichi. Aichi, the brewing kingdom, is amazing! I think they made this sake because it has a strong image of being rich. This is a must-try brand for those who like heavy Yamahai. It's encounters like this that make sake so interesting and hard to stop drinking!

I came across it when I was exploring sake shops, so I bought it. It's my first time to buy Dewa Sanzan. Cold sake. The gorgeous aroma is amazing. I want to immerse myself in this aroma. First of all, you can feel the sweetness and moderate acidity, but a slight bitterness asserts itself. It is sweet, but it disappears nicely and the aftertaste spreads, leaving a little bitterness on the tongue. The bitterness is a little stronger than the sweetness of the Omachi I drank before. The overall balance might have been better with the Omachi? I couldn't think of a dish to pair it with, so I paired it with apples, cheese and cured ham. The pairing with the sourness of the apple was great! I don't usually eat fruit, but I think I'll be consuming more apples until the bottle is empty!

I went to buy other liquor and they happened to have it, so I bought it for the first time. Cold sake The aroma is very gorgeous! It's a pineapple type, similar to the Kameizumi we drank the other day, but it's a little calmer than that. When you put it in your mouth, the fruitiness is amazing! It's already delicious before you even swallow it! Sweetness and rice flavor combine with a refreshing alcohol taste. The beautiful aftertaste keeps spreading from the moment you swallow it! And a delicious bitter taste! This is my second time drinking Hanayo-yoku, so I don't know much about it, but I understand why it is so popular. I want to compare various kinds of drinks.

I've seen this brand name here and there. I bought it because it was sold in a supermarket near me. It was heated up. I felt the alcohol in my nose. I thought, "Have I done this? But when I put it in my mouth, I felt a surprisingly calm umami. It has a good balance of refreshing acidity and umami, and is both spicy and crisp. Chilled I think the sharpness of the heated version is gone. I couldn't tell much when it was warmed, but it is a little thick. This thickness softens the alcohol and keeps the balance with the umami. It doesn't have a piercing sensation, but it can be served cold or warm, and it's a great value for around 900 yen.

Drunken Opening of the Mouth Series Part 2 Thoughts on the second day of opening my mouth I couldn't find the first one, so here is the first Sharaku The appearance is quite cloudy. Soft lactic acid-like aroma. It is very silky in the mouth! The elegant acidity and umami that is typical of Sharaku is delicious! The bitterness that remains in the aftertaste is pleasant and long. You can't go wrong with any of Sharaku!

The first in a series of drunken, unplanned sips. My memory of the first day is a bit hazy, so I'll leave my impressions of the drink again on the second day. The flavor is strong, and while I felt a bit of alcohol, it disappeared with a delicious bitterness. Stylish taste! But I have to say that it didn't have the impact it had when I first had it in 2018. Not sure if my tastes have changed, if it was a bad idea to let it sit for a bit, or if it's just not the same this year! But I'm a fan and I think I'll drink it again either raw in the spring or lit in the fall

I like Moribari, but I bought this one for New Year's sake. Chilled I can feel the soft acidity and the umami of the rice. There is almost no bitterness, and it disappears quickly after a while. Warmed up I feel the acidity a little more strongly now. It's still soft on the palate, but the umami spreads further. It's a sake that warms up well. Warmed up The acidity and bitterness have become a little stronger. It's best warmed up. But it goes really well with food even heated up, so it depends on the temperature of the food. It is an excellent sake that goes well with all kinds of Japanese food. This brewery has been through a lot this season, but I hope the taste remains the same.

The first one of the new year is "Jijima" which I bought around February last year and was sleeping in the refrigerator. Let's hope it's not too bitter! This is my second time drinking Izumikawa this year and my first time drinking Funakuchi. Last time I tried Ginjo Cold sake The aroma is slight. It has a slightly choppy and thick taste, with a beautiful acidity and a pleasant umami taste. It goes down the throat quickly with a hint of sweetness and a little bitterness. This is delicious! The best balance! Personally, I think I prefer Izumikawa to Tobiroki. It's a little sweeter than the Tobiroki Jundais I drank the other day (maybe due to the thickening). You will not get tired of drinking it, and it will go down easily! It was the best pairing with lotus root kimpira, and I think it has the potential to go well with a variety of dishes. I hope we can meet again next year! It seems to go well with New Year's dishes such as Osechi, so much so that I wonder if I should have opened it on New Year's Day! Cold sake It's thicker and more sour than cold sake. It seems that cold sake is better in terms of balance. Warmed to the skin The acidity is still strong, but the bitterness has increased. I think this sake is best served cold.

I've been letting it sit for about 6 months, but I'm planning to open Izumikawa (which is the real deal) at the end of the year, so I opened it to see the difference. Cold sake The aroma is very mild. The acidity and bitterness come first, followed by a mild umami taste, and then a clear, dry taste that disappears from the mouth. The quality of the sake is very clean, and the character is not too strong, making it a well-balanced sake for sipping. Jundaishu as a saké? But it's easy to pair with many things. It's more fish than meat. I'd like to try it with oyster butter. I'm sure it would go well with poelee, so let's go buy some fish before they run out! It's a bit expensive at over 2500 yen for a 4-gallon bottle, so I think I'd rather have the black label or the special junmai. I almost never see them on sale, though!

I've never drunk one before, only the ones known for their sweetness. I compared it to other posters' pictures, and there's a lot of variation in the specs. Cold sake The aroma is really pineapple! I know it's been said a lot, but I think it's a perfect description. When you put it in your mouth, the sourness comes first and the umami spreads quickly. The bitterness is weak, and a refreshing aftertaste lingers after swallowing. This is delicious! Before drinking it, I thought it would be too sweet, but the acidity is so pleasant that it doesn't bother me at all! I think it's best served cold, but I'll enjoy it at different temperatures.

The person at the store said that Ginjo was not produced for a while, and it seems to be a product that was revived in 2020. I wasn't sure if it was the Junmai that was next to it, but since it was a new product, I thoughtlessly jumped on it. Cold sake It's hard to explain, but the aroma is the Ryujinmaru! I think this aroma is unique. When you hold it in your mouth, the umami and acidity of the aged taste is unique. It's similar to the way I felt when I drank the Ryujinmaru Junmai Ginjo this year, but I don't know or remember the difference at all! I'd like to compare them! I don't think it's a trendy flavor, but I think it's great that they are making such unique and delicious sake. I want to try the Junmai or Daiginjo next!

Shirataki Namamotake-Zukuri Junmai-Shu I asked for a heated sake at the liquor store, and they recommended this one, which they only had in a 1-masu bottle, but I figured I could keep it at room temperature. Apparently it's only available twice a year. I'd only heard of this brewery before, but I didn't know they made this kind of stuff. It has a retro label, but the English font is very cute. Cold The aroma of soft lactic acidity spread and surprised me! No, it's natural because it's a namaimoto type, but I was surprised at the difference because I only knew Kamizen. When you put it in your mouth, the sweetness comes first and then the sourness is quite strong. After that, the bitterness and the sourness go away. I had only a light image of Jozen, but it is good with a solid taste. Tepidly heated The alcohol has become a little stronger. The sweetness and the umami of the rice spread in the mouth. The bitterness has rounded off and become more cohesive. A very tasty sake that you can continue to drink without worry. There is more to come, so I look forward to seeing how it changes over time!
