This is the standard Hououbiden that you would expect - sweet fruity smell and palate. A bit too thick and sweet for me though.

Nicely done. Melon fruitiness on nose. Slight carbonic acid feel when pouring in, very elegant and refreshing. Nice and balanced texture while it demonstrated ginjo style in apple & pear feel withslight rice sweetness. Slight bamboo at the end with a very clean finishing.

Very distinctive Dassai JDG - it comes with clear melon smell and taste. Also the mellow feel as it is a 23% JDG. Very clean and crispy, and the fact that it is only at 11% abv made it very easy for beginners to drink. Nicely done.

On nose it is more of lactic acid feel - fresh cheese and yogurt. On palate it is really quite interesting - while it has the familiar peach and pear smell, but what dominates is kind of tropical red fruits - like grapefruit / berries. Seldom found this kind of taste in sake. Definitely it is complex due to use of Bodaimoto - cheese and cream feel comes with slight umami at the end. Not as full body as expected, but a good one still.

It is not as rich as the other Mizumoto that I have tried before. Instead it is quite dry and the aroma is not very prominent. Still more lactic acid feel as you have expected, together with slight umami, but overall it is quite balanced.

Finally a chance to try this difficult to get sake! A great one which comes with pleasant but solid umami. On nose it is elegant aged cheese, soy sauce flavour while on palate it is not too heavy and easy to drink. I think it is a great match with dishes that have much sauces. Easily drink a lot!

Though they use the same type of rice (Yamadanishiki) with 45% polishing ratio, they come with quite different styles.
勝山style comes with more fruity notes, which is more standard JDG feel. Also it gives you a little bit cream and milk feel, then some minerals, guess it is more on the minty and bamboo feel.
While 墨迺江 style is richer with more complexity. Though it still comes with slight fruity aroma, it is the yogurt and fresh cheese that takes more prominence in taste. Also slight umami spot

Some standard Daiginjo that I would expect. Fruity smell, sweet in palate, melon and pineapple. Though I would like to have more complexity.

Not a bad one to start with. Smooth and easy to drink. A bit sour feel in the beginning, grape like aroma. Flavour is lighter than I expected but not in a bad way. Also bit yeasty. Overall clean and did its job.

Nice aroma and taste with multiple layers - fruity sweetness, rice sweetness and lactic acid sourness. Also some umami at the end of sake - nicely done and good one to drink!

It is definitely not the JDG you would expect - the aging part makes it come with a golden yellow color. On nose it comes with some fresh cheese and yogurt, together with some pleasant umami of soy sauce. I think theres a bit if nuttiness as well. Overall it is quite smooth and it also shows character of cooked rice. You wont fond the fruitiness you would expect from JDG - but actually a good one that shows the variety of sake!

Long while since I last drank a Hououbiden - still sweet as I would have known. But the aroma is pleasant fruitiness without bad stuffs. Standard JDG which you could expect, though i like more layers of taste.

Nice on nose - very fresh and fruity melon banana like sweetness. Slight bubbles go suit the summer theme. On palate, apart from sweetness it comes the milk and cream feel sour and saltiness - which adds some elements into the Sake. Also theres feel of vanilla, so the sake is also quite smooth. Personally i think the mint and bamboo feel of the sake is too prominent, can be made in a more elegant and balanced way.

It has been a while since I last drank Tenbi sake. I heard they have not released any new sake after the previous Toji left, therefore this is a sake from Nov 2023. Surprisingly it is still quite fresh - standard sweetness in an elegant way as I would expect from a Junmai Ginjo. Simple after taste, slight rice sweetness, easy to match with food.
