It is definitely not the JDG you would expect - the aging part makes it come with a golden yellow color. On nose it comes with some fresh cheese and yogurt, together with some pleasant umami of soy sauce. I think theres a bit if nuttiness as well. Overall it is quite smooth and it also shows character of cooked rice. You wont fond the fruitiness you would expect from JDG - but actually a good one that shows the variety of sake!

Long while since I last drank a Hououbiden - still sweet as I would have known. But the aroma is pleasant fruitiness without bad stuffs. Standard JDG which you could expect, though i like more layers of taste.

Nice on nose - very fresh and fruity melon banana like sweetness. Slight bubbles go suit the summer theme. On palate, apart from sweetness it comes the milk and cream feel sour and saltiness - which adds some elements into the Sake. Also theres feel of vanilla, so the sake is also quite smooth. Personally i think the mint and bamboo feel of the sake is too prominent, can be made in a more elegant and balanced way.

It is a fresh sake to start with - comes with pleasant fruity sourness and sweetness. Some bubbles as well. But overall I think it is too plain sweetness for me, lacking some complexity.

It has been a while since I last drank Tenbi sake. I heard they have not released any new sake after the previous Toji left, therefore this is a sake from Nov 2023. Surprisingly it is still quite fresh - standard sweetness in an elegant way as I would expect from a Junmai Ginjo. Simple after taste, slight rice sweetness, easy to match with food.

Fresh and easy to drink. Fruity sweetness and some fresh milk and yogurt lactic acid feel coming from the Namazake portion. No burden to drink this.

Interesting sake using olive yeast. Frankly I was afraid it will be quite heavy and salty before drinking. Though it smells umami and soy sauce at the beginning, it is much lighter and feels more elegant. It comes with fresh cheese sourness and a little bit yogurt and soy sauce saltiness, but in a nice sense. Will not be too much a burden even drink more.

A mysterious sake which I bought from the Sado port sake shop of Utashiro. To match with the description in the shop, this mysterious sake ver 3.0 is really clean and crispy and cause no burden to the drinker. I guess it is a Junmai Ginjo style - which comes with sharp fruity melon sweetness. A little bit if rice sweetness too. Very clean and not much after taste. Real kire, and nicely done. At 2000 JPY, it really worths this price! Great one!

Special sake only for the Gacha game! Though it is the smallest prize, I do appreciate the Shuzo for specially making a sake for this game of 500 JPY - which I think actually worths the price! Standard Niigata sake showing the rice power - bit of lactic acid sour like milk or yogurt plus slight and pleasant umami. Light and smooth.

Support Noto to rebuild after earthquake! In these two sakes, I think I like this one more. It has a bit of sparkling feel, fruitiness is more gentle and pleasant. I also think it is more balanced with sweetness and sourness blend together, also the minty alcoholic feel is less prominent. Like it!

Very fresh sake just released. The alcoholic smell and taste is a bit too prominent. I would say it is very pure melon fruity sweetness without much complexity. Bit too plain for me.

Parallel tasting of 2021 & 2023 Aramasa! Comparing to ็ง‹ๆซป it is more contained which not comes with outstanding freshness. Both are quite rich that comes with lactic acid and rice sweetness. Maybe a bit heavy for some people but definitely a good sake. I still prefer the 2021 version more.

Parallel tasting of Aramasa Colors in 2021 & 2023. The 2023 comes with very fresh taste with some small bubbles feel. On palate it comes with some fresh lemon sourness (due to use of white koji) and i think of something like calpis too. I would say the 2023 version is still a bit plain. Meanwhile the 2021 version is much richer and comes with more layers. Not only the fruity sweetness, but it also carries the lactic acid saltiness like cream and yogurt. Umami can also be spot at the end.

Firstly the bottle is really of high quality and beautiful. I canโ€™t resist keeping the bottle at home! Being frank, the smell surprises me - it is rich of umami, mushroom and soy sauce. Also lactic acid smell like fresh and mozzarella cheese. However when I actually drink it, it tastes much lighter than I thought. There is a bit of cooked rice sweetness, cheese and yogurt sourness and the umami comes at the end. Significant and easy to recognise. Nice Niigata style.

So lucky to have got a chance to taste this rare Aramasa - I seldom see it in Hong Kong. I love this sake as it is elegantly complex, the fruity sourness, sweetness, a little bit of milk and cream, and slight umami all blends very well. Very smooth and itโ€™s not very heavy - make it very easy to drink. Love the finishing which the slight umami is doing its work. Good balance. Worth noting it is lighter than the other Kijoshu that I have tried - which I like :)

Aramasa ไบœ้บป็Œซๆ”น 2023 - just arrived the restaurant and got a chance to have a glass to try! The signature of it is the using of white koji - which gives it a distinctive lemon sourness. Very refreshing and nice balancing of sweetness and sourness.

Finally got a chance to visit Eureka! and try the official pairing with Fried Onion Mousse. It is really a perfect match. Chocolate kun by itself for some people may have a too complex flavour - chocolate, caramel, soy sauce umami, honey, cooked rice sweetness. By pairing it with the onion mousse, the whole wine become smoother and blends very well with the creamy texture and fresh cheese flavour. Also it makes the fried onion mousse less oily! Really perfect match!

I am simply too happy when finally got a chance to taste this brand new Aramasa No.6 A-Type. Nice match with tuna sashimi together with some citrus seasoning. Makes the taste going up to another level!

Fine and elegant bubbles. Good to be served as a starter. Really sweet - rice and fruit sweetness. Didnt spot the bitterness I usually found in sparkling wine - little bit of honey bread flavour spot.
