Very standard Zaku. If you like the aromatic type of sake, it will not disappoint you. Fruity melon and pineapple like on nose, sweet on palate with not much umami or else. Very easy to drink.
It has been a while since I last drank Hououbiden. I think its fruity seeetness is still very signature on both palate and nose - in a good way. Nice easy drink as always.
This is a more balanced version. Think it is a nice try though the sourness may not be for everyone. Think it is really traditional style which gives you a stronger flavour.
Must be very careful when opening this bottle! If you open it directly, for sure you will lose 1/3 of the bottle! It is an above average sparkling sake i would say, pleasantly refreshing with a bit of yeasty bread feel, fresh fruit sweetness as well. It ends with a bit of bitterness which is as expected and manageable.
I think it is quite a standard Niigata ๆทก้บ่พๅฃ style. Though when opening the bottle there is slight cooked banana smell, on nose the lactic acid & rice style is more prominent. On taste it does not give you anything fruity, instead it is rice, yogurt, cream and slight umami at the end. The alcoholic feel is also prominent. Quite crispy in general.
It is very elegant when first opening the bottle. Fruity, melon and pineapple like on nose, full and elegant. In the first sip it is also sweet and fruity, a great one to taste. However, i think the sake is not very good at pairing with food. The alcoholic feel becomes more prominent and some salty and sour taste come out which I think is not the intention of the brewer. So better drink on its own instead.
Always my choice as the sake to start. Never go wrong with freshness. Fine bubbles to refresh the palate as well. 12.5% abv genshu shows the effort placed in brewing, and the outcome is great. Slight fruity sweetness but more on the rice side - yakult type of sourness which is a good balance. Not much bitterness spot, clean and crispy, kire!
One of the finest sake by this brand - JDG with 35% rice polishing ratio, with a great outcome of balance between fruity sweetness and slight acidity. Long after taste which has depth and complexity. Nice one.
Not seen this small bottle before - but then everyone will only be able to get a sip of it. Still a very fresh one with clear fruity sweetness, wont disappoint.
Always a good sake to start the party. Clean and crispy one, slight fruity sweetness and I can feel a bit of sweetness from the rice too. Comes with light and fine bubbles, giving a very refreshing feel. Sharp and crispy finish, totally kire style. No burden at all~
Not so sure if it is in the best condition - strong alcoholic feel, need to rest for a while before it is more balanced and easy to drink. Not very fruity in style - while more of umami and cheese feel. May need to try other types to get a fairer impression.
So happened I visit the area, so I bought this very local sake from the Shuzo. Frankly I canโt rank high for this sake, it is a more traditional type of- coming with cheese and umami feel, but too heavy and not blending very well. For Honjozo, I would expect it to be more sharp and crispy - but totally not that thing. Just for fun sake, not for serious drinking from my view.
Very fresh sake and blends very well. Come with fine bubbles and slight sparkling feel. Fresh fruity pineapple and melon on nose and palate, nicely done. A bit sourness which makes it balanced and easily drink. Not with the unpleasant bitterness that are usually found in TJ.
An interesting sake that comes with nice complexity. On sight it gives a yellowish color - some hint on its taste. On nose it comes with some fresh chees or mozarella cheese, with slight umami hint. The sourness on palate is pleasant though it os quite significant. It wont make you feel awakward but actually blends quite well. Slight nutty and umami feel at the end.
A very local sake that I bought during my visit to Nihonmatsu. Actually it has performed better than my expectation - easy to drink, fruity aroma like melon and pineapple. Clean and crispy - fruity taste and will not be too full. Sadly it wont be able to find outside the city seems.
A very easy to drink sake. Needs to be cautious when opening it though as the cap may pop! Overall it is refreshing with fine bubbles. Clean and crispy, slight fruity feel but ig demonstrates more on the character of rice with slight mineral feel. Very pleasant and good to pair with sushi and sashimi - will not over take the taste of food but rather make it sweeter! Nicely done.
First time to try this very premium sake in the brewery itself. But sadly I think it is not in the best condition. Perhaps it has not been rested enough? Or it has been opened for too long? I feel it is a bit plain and I cannot feel the complexity and richness that I would expect. The other ones tasted that day are performing better!
