A bottle drunk at home.
It is labeled "single flame," so it must have been fired once.
It is fresh, but not fruity. It is rather dry with a crisp finish.
It's still hot outside, but I want to enjoy autumn drinks.
It has a rounded flavor unique to hiyaoroshi. It has a rounded flavor that is unique to hiyaoroshi, yet it has a robust taste, so it goes well with dishes with strong flavors, such as simmered dishes.

We started with a refreshing one that goes well with sashimi. It went down my throat and had a refreshing aftertaste.
The event will compare four different types of junmai ginjo and special junmai sake, each of which is a pure ginjo and a special junmai sake, both raw and fire-brewed, from Saka Shuzo, the oldest sake brewery in Saga Prefecture, which changed its name from "Sado no Ume Shuzo," which is located in Kubota-cho, Saga City.
The special junmai sake is suitable for drinking in mid-summer. It has moderate acidity and a robust flavor. It is like drinking white wine and goes well with stewed dishes such as pasta with tomato sauce and tripe.

The special junmai sake. This is the best sake to drink in midsummer! It has just the right amount of acidity to give it a cool, refreshing feeling. It is like drinking white wine and goes well with olive oil dishes such as carpaccio.

Takijinboast Junmai Daiginjo Aizan Super Limited Nama-Nihonjunshu

The fruity acidity unique to the sake is pleasant to drink.
Junmai-shu Nama Hanayu Rikuwada
This is a cup brewed by Ryoseki Shuzo in Yuzawa City, Akita Prefecture.
I had never heard of the brand name Hanamup or the sake rice called Rikuwada before.
The sweetness is followed by a pleasant acidity that is typical of nama-shu, making it perfect for drinking chilled in the summer.
Nagano Sake Series.
The lake in "Mikotsuru" refers to Lake Suwa. The name "Mikotsuru" comes not from the place where cranes fly, but from a dream the founder had in which a crane (a messenger of God) appeared.
The company that revived this once-closed history is Ban'ei Transport, located in Iwaki City, Fukushima Prefecture, a long way away. I surprisingly like to drink while retracing these stories.
Nagano sake series.
Taisetsukei" itself has a popular image as it is also available in paper cups, but this junmai nigori sake has a high quality taste that could be served at a kappo (Japanese restaurant).
It has the sweetness of koji, but with a clean aftertaste, it is an "adult Calpis" that you can drink as much as you want.
Nagano Sake Series.
This is a cup brewed by the Nanasho Sake Brewery in Kiso.
This clean, dry sake is perfect for early summer.
It is not only spicy, but also has the umami flavor typical of junmai sake.
Although the rice polishing ratio is 60%, it seems to be a junmai sake without "tokubetsu" (special).
Nagano Sake Series.
A cup from the Yukawa Sake Brewery in Kiso. A special junmai sake with a rice polishing ratio of 60%.
Although the alcohol content is slightly high at 16%, it is mild and mellow, so be careful not to drink too much.

Jyushidai Nakadori Akaban Omachi Kamimoroshiro (Junmai Daiginjo)
The waiter secretly whispered to me, "We have a 'Jyushidai' today," and I ordered it without hesitation.
I was glad I did. It has a clear, clean and elegant aroma. Omachi has a powerful image, but I have a feeling that it requires a great deal of skill to make it this clear.

Kagatobi Junmai Daiginjo Yamahai
This is the sake we had at a sake party to support the Noto Peninsula earthquake relief efforts.
When I drank Junmai Kagatobi at another restaurant before, it was so dry that it made me shiver,
Compared to that, it had a surprisingly sweet taste. But compared to that, it surprisingly had a sweetness to it, with a clean aftertaste.
This is good!
