* Tooyama 1,595 yen Polishing 70%, 16%, 100% Aizan On the first day of opening the bottle, it felt quite hard and the alcohol was strong, making it a bit difficult to drink. Just as the waiter had told me. However, I was told that it would become dramatically easier to drink over the next few days, so I took my time and waited. After about three days, the sweetness was noticeable and the flavor was so strong that it was almost as if it was a different sake. It is also wonderful that it has a bitter taste without being too sweet. I bought it at the end of the year, but it was too good to waste and I opened the bottle too late. The supernatant is quite dry. Even when mixed with corkage, it was not fruity. I thought it was not that much to my liking, but after a day, it changed dramatically. The slight sweetness and umami are all over the silky texture! I really like this kind of creamy drink. It was indeed a strong gas, but it tasted drier than Yuki Onna and Snowman. There is still a hint of alcohol, but the flavor is strong enough to keep you coming back for more. I was attracted by the eye-catching label at the Imanishi Sake Brewery's direct sales store on the approach to the oldest shrine in Nara, the Okami Shrine. After all, something that can only be bought locally has its own appeal. It's a Junmai Ginjo, but it's labeled as a sake. The taste is very refreshing and sweet, as if it were a new, young sake. I thought it was a bit lacking, but when I heated it up, the beautiful acidity came out, emphasizing the fruity flavor. I've had the impression that heated sake often has a drier feel, but this is the first time I've had a sake that is so easy to drink that the flavors just intensify. It's very deep. I drank it with a beautiful oriental flavor. It has a lively gaseous feeling and a mild rice flavor. It's a really gorgeous sake that doesn't have a bitter taste, but it's not too sweet either. It has a refreshing aroma like Muscat, and the taste is really like Calpis soda. I regret that I had to finish it all in one night. It is the best Nigori sake along with Senkou Yukidaruma. I can't wait for the next winter! As the name suggests, this sake emphasizes a citrus flavor, and whether it's Takachiyo or Kouei Kiku, it's really strange how you can get the fruitiness out of rice🤔. The low alcohol content and the fresh taste are complemented by a hint of bitterness from the cork, so I couldn't stop drinking it, and it was gone in a flash. * * Imanishi Shuzo 1,430yen 16 degrees We visited the Imanishi Shuzo Honten, which is known for its Mimurosugi. Incidentally, the hiragana name "Mimurosugi" is for people outside Nara Prefecture, while "Nagamoro-sugi" is for people in the prefecture. I was attracted by the old-fashioned label and the unusual size of the bottle (900ml). It was so active that it took a few minutes to open the bottle even after a few days of resting in the cellar, and it fizzed and mixed on its own, so I couldn't drink just the top of the bottle, but when I tried it, it tasted very dry. I was worried that I wouldn't like it, but when it got a little hotter, it was so sweet and juicy! I have no idea how it works, but it's just so good! * Kadoya 1,554 yen Polished rice 60% 16 degrees Miyazumi Meijo is famous for Sharaku, but I bought Miyazumi brand which is sold mainly in Fukushima, my hometown. It had been chilled in the cellar for quite a few days, but the gas pressure was still high enough to make a nice popping sound. The aroma is mild, and the sweetness is restrained, but you can really feel the deliciousness of the rice that is unique to origarami. I dared to heat up the last glass, but it didn't have any unpleasant acidity, so it was as easy to drink as if it were chilled. I can't wait for the new sake season, when the nigori comes out well. It is the first new brand from Kikumasamune Shuzo in 130 years, and I was impressed that she took the time to look it up and choose it for me even though I don't drink sake. * Gift Yamada Nishiki, 45% polished rice, 17.5 degrees This sake was left on my desk while I was taking a nap at work. It's a humble job, but it's nice to be thanked for it. Now, Hakkaisan, it's also nice to be exposed to a sake that I don't often choose myself. It's not juicy or sweet, but you can feel the rich and deep rice flavor. It is just as I imagined it to be, a lean, orthodox and mature sake. This time, the image of apples is used to create the 🍎, and while it is not juicy, it has a beautiful sweet and sour taste that is refreshing. It's more like a dessert than a sake for sipping. The inside of the sake cup is filled with small bubbles. Contrary to the fruity aroma, it is very dry when you drink it with the ori. A little disappointing, isn't it? After letting it sit for a day, the corners come off and the taste changes to very juicy! The soft sweetness of the green apple is complemented by a hint of bitterness.
