I have been away from Amami for a long time, but I bought a bottle of this summer sake-like product.
It has a good balance of sharpness and sweetness, which is typical of hi-ire sake.
It is a stable sake even after a week and I rather like it.
The Tokkami I had before was delicious, but the Tokubetsu Junmai may be even better!
Muscat and Japanese pear flavors to a slight gassy finish. There is a banana-like sweetness at the end, but the bitterness is also present and not sticky.
I didn't know Suehiro Shuzo brews such good sake...I wish I could go there too!

Personally, I prefer Kuraku Junmai to Junmai Ginjo, and maybe I shouldn't be fooled by the specs!

Firm bubbles and body. High in alcohol content, fruity but with a bitter taste. I wish they would make it a regular item.
Flavors of lychee and muscat derived from Shunyo, which is hard to believe the rice polishing ratio is 85%. It finishes with a decent bitterness, so it's very satisfying.
What I like about Musical Instrument Masamune is that they challenge themselves with this kind of alcohol. Even in the craft beer world, Sorachi Ace seems mature and delicate, but this one also has a slight hop nuance.
It's refreshing, lush, and not as overdone as craft saké. Perfectly crafted.
