A bottle brewed by the Bodai-zumi method using Kaze-no-mori ALPHA No. 6 yeast. It is an advanced or dry sake, with a bitter and rich taste, followed by a lingering bitterness, and then a crisp finish.
It has a yogurt-like and fresh fruity taste, with acidity, umami, sweetness, bitterness, and a crisp, elegant, and chic sake. It went very well as is or with a "cannelette" ^ ^ ^.
Koueikiku Anastasia Green

Fresh acidity, green apple-like fruity taste, rice flavor, bitterness, and a medium lingering finish.
Like its name, this sake reminds one of the changing of the seasons as the leaves on the trees turn green from spring to summer. Sake that goes well with May. Just before GW^ ^ ^ I'm in the mood.
It is recommended to be warmed (いたる) rather than chilled (冷や).
Wrap it in plastic wrap and warm it in the microwave for about 80 seconds to give it a sweet banana-like aroma and sweetness! It is like having it with sweets.
It is also sweet when served cold, but I felt it was lacking in sweetness. Warming it up will bring out its character.
Utashiro Hanaakari" has a gentle, fruity mouthfeel, and is a very refreshing sake (with a medium aftertaste). It is suitable as an aperitif or after-dinner drink.

This is my favorite sake from Hyogo Prefecture (personally, so far)!
It is a lovely sake with a fruity and juicy pear-like flavor and sweetness on the palate, going through phases of acidity and bitterness, and finally finishing with a refreshing kick.
It is made from "Aizan," Hyogo Prefecture's rice suitable for sake brewing, polished to a flat rice (shagin).
A pink sake with a harmony of sweetness and sourness that reminds one of spring. It is more like amazake or drinking strawberry yogurt than sake. It is a quirky bottle, but one that you will miss when spring approaches.

Kaika Junmai Sake Arabashiri

Daiichi Shuzo is the pride of Sano, and last year, on the occasion of its 350th anniversary, the toji (master brewer) was changed from one generation to the next. This is one of my personal favorites among Kaika.
It is juicy and mellow on the palate, fruity, with a taste of rice, acidity, and bitterness.
It goes well as an aperitif or with dessert. It also goes well with brandy-soaked fruitcake.
The design and colors of the label are gorgeous.
The taste is derived from rice, with a numbing and bitter attack and a long bitter finish. The sweetness is moderate. If you let it sit for a few days after opening the bottle, the mouthfeel will transform to mellowness!

A very sharp and fast sake.
The attack is juicy and fruity, and while you think you taste sweetness, acidity, and bitterness, it's already snappy^ ^ Personally, I would have liked a bit more of a lingering finish, but it made me want to keep reaching for the next sip and the next dish, which was interesting and endearing. Koeikiku brews a variety of creative sakes that are sure to please!

We happened to have this sake on New Year's Eve, and it was a fitting end to the year. Thank you very much for the sake.

It went well with pumpkin stew, stir-fried vegetables and grilled rice noodles ^ ^.
Daimine 3 Grains - The Winter Comes

This sake has an elegant rice flavor, is easy to drink with a slight effervescence, has an excellent balance of sweetness and acidity, and is full of flavor. I simply love it.

Just like the image of Yuki-Onna standing still. The bubbles and lees remind me of snow falling. Fresh sweetness like muscat and melon. Lively acidity with a hint of dairy gives the mid-palate a lively lift. The lingering aftertaste is like the melting of snow, fading away softly and regrettably.
