Dewazakura Daiginjo-shu, Fire-brewed in Bottle Tendo City, Yamagata Prefecture / Dewazakura Sake Brewery The attack is juicy, with a slight banana aroma, sourness, and bitterness. It was just my kind of sake. [Sake Brewery Memo] "Ginjo as a global language." Founded in 1892 (Meiji 25). Since then, the brewery has continued to produce sake with the single-minded goal of "spreading the excellence of ginjo-shu to as many people as possible" by focusing on quality-first sake brewing with local roots. https://www.dewazakura.co.jp

Kaika Junmai Sake Arabashiri Daiichi Shuzo / Sano City, Tochigi Prefecture Daiichi Shuzo is the pride of Sano, and last year, on the occasion of its 350th anniversary, the toji (master brewer) was changed from one generation to the next. This is one of my personal favorites among Kaika. It is juicy and mellow on the palate, fruity, with a taste of rice, acidity, and bitterness. It goes well as an aperitif or with dessert. It also goes well with brandy-soaked fruitcake. The design and colors of the label are gorgeous.

The taste is derived from rice, with a numbing and bitter attack and a long bitter finish. The sweetness is moderate. If you let it sit for a few days after opening the bottle, the mouthfeel will transform to mellowness!

Koei-Kiku SNOW CRYSTAL Unfiltered Nama-shu Koeikiku Shuzo/ Saga Prefecture A very sharp and fast sake. The attack is juicy and fruity, and while you think you taste sweetness, acidity, and bitterness, it's already snappy^ ^ Personally, I would have liked a bit more of a lingering finish, but it made me want to keep reaching for the next sip and the next dish, which was interesting and endearing. Koeikiku brews a variety of creative sakes that are sure to please!

Daimine 3 Grains - The Winter Comes Daimine Shuzo / Mine City, Yamaguchi Prefecture This sake has an elegant rice flavor, is easy to drink with a slight effervescence, has an excellent balance of sweetness and acidity, and is full of flavor. I simply love it. [Reference Description] Just like the image of Yuki-Onna standing still. The bubbles and lees remind me of snow falling. Fresh sweetness like muscat and melon. Lively acidity with a hint of dairy gives the mid-palate a lively lift. The lingering aftertaste is like the melting of snow, fading away softly and regrettably. About Daimine Sake Brewery This sake is made by extracting the various flavor components that are lost during alcoholic fermentation to the maximum extent possible through our own research, and pursuing the ultimate balance of sweetness, umami, and acidity.

Mitsui no Kotobuki - Dai-harakuchi (+14) Junmai Ginjo Mitsui Kotobuki/ Mitsui District, Fukuoka Prefecture, Japan This sake has a watery mouthfeel, followed by a numbing bitterness. It is only a very dry sake, and I could hardly taste any sweetness. In addition to a refreshing dish, I felt it went well with spicy fried food. [Sake Brewery Memo] Mitsui no Kotobuki is a sake brewery located in Mitsui County, Fukuoka Prefecture. Since its establishment in 1922, the brewery has consistently focused on "quality" since its days as a rice wholesaler, and more than 90% of the sake it produces is sake with the specific name of "ginjo" (ginjo), which means "pure rice sake. https://miinokotobuki.com/
