The attack has a yogurt-like aroma, a hint of sourness, and a refreshing yet full flavor from the oily rice cake. The sake rice is made by Sanyo Bai Sake Brewery's signature "Shin Gin" method. It is a cool, elegant and soothing bottle for the hot season. The label also creates a peaceful atmosphere.

Omine 3 grain's Summer Sake 2024 - Summer's coming - attracts me from the bottle design. The attack has a green apple-like aroma. Elegant acidity, rice flavor, and sourness can be felt. It is a refreshing sake that will refresh your palate. It looks delicious over shaved ice. I don't know about that.

Hououmida Nikko" brewed by Kobayashi Shuzo in Oyama City using water from Nikko The attack is delicious with a pineapple-like aroma! The taste gradually turns clear and watery, and as the sake flavor passes through the nose, a hint of bitter bitterness is felt, with a slightly long aftertaste. Deliciously enjoyed ^ ^ ^

The pride of Nagano Prefecture, "Hanasora from Oshinshu". After the juicy and elegant pear-like aroma spreads, the flavor quickly turns sharp, with a hint of bitterness and a medium aftertaste. It is a wonderful sake that truly deserves the name "Japanese rice wine. The label design is gorgeous and stylish! [Collaboration with painter Chihiro Koshi.]

i240 (iwanoi240) Junmai Ginjo Tamakae Unfiltered Nama-shu (Unrefined Nama-shu) Comparison with the earlier Gohyakumangoku The attack gives a tingling sensation that numbs the tongue. After that, the delicious taste of rice spreads in the mouth. The tingling comes back again at the end. As one would expect from a sake brewery located in Oyado near the sea, the tingling waves come and go^ ^ ^ The aftertaste is long. The aftertaste is long. It is an elegantly dry sake.

i240 (iwanoi240) Junmai Ginjo Gohyakumangoku Unfiltered Nama-shu Iwase Shuzo / Oyado Town, Isumi District, Chiba Prefecture, Japan It has a banana and nutty aroma on the attack, a little on the nose, and then turns to rice flavor and bitterness, with a medium lingering finish. Personally, I found it to be an osare sake. [Sake Brewery Memo] The Iwase Sake Brewery is the only sake brewery in Oyado that continues to focus on "Yamahai" sake. The Iwase Sake Brewery has a long history, having been founded in 1723, about 300 years ago. Although sake brewing was not the main business of the brewery, it was passed down from generation to generation, and the brewery began full-fledged operations in the Taisho era (1912-1926). The company has won numerous awards and was recently recognized by world-renowned wine critic Robert Parker in 2016. https://chibasake.com/pages/%e5%b2%a9%e7%80%ac%e9%85%92%e9%80%a0

Koueikiku Anastasia Green Mikazuki-cho, Ogi City, Saga Prefecture/ Koueikiku Sake Brewery Fresh acidity, green apple-like fruity taste, rice flavor, bitterness, and a medium lingering finish. Like its name, this sake reminds one of the changing of the seasons as the leaves on the trees turn green from spring to summer. Sake that goes well with May. Just before GW^ ^ ^ I'm in the mood.

It is recommended to be warmed (いたる) rather than chilled (冷や). Wrap it in plastic wrap and warm it in the microwave for about 80 seconds to give it a sweet banana-like aroma and sweetness! It is like having it with sweets. It is also sweet when served cold, but I felt it was lacking in sweetness. Warming it up will bring out its character.

BANSHU-IKKON Junmai Ginjo Aizan Nama Sanyoibai Shuzo / Shiso City, Hyogo Prefecture This is my favorite sake from Hyogo Prefecture (personally, so far)! It is a lovely sake with a fruity and juicy pear-like flavor and sweetness on the palate, going through phases of acidity and bitterness, and finally finishing with a refreshing kick. It is made from "Aizan," Hyogo Prefecture's rice suitable for sake brewing, polished to a flat rice (shagin).

A pink sake with a harmony of sweetness and sourness that reminds one of spring. It is more like amazake or drinking strawberry yogurt than sake. It is a quirky bottle, but one that you will miss when spring approaches. *Activated Nama Sake (-5°C to 5°C, storage required)

Dewazakura Daiginjo-shu, Fire-brewed in Bottle Tendo City, Yamagata Prefecture / Dewazakura Sake Brewery The attack is juicy, with a slight banana aroma, sourness, and bitterness. It was just my kind of sake. [Sake Brewery Memo] "Ginjo as a global language." Founded in 1892 (Meiji 25). Since then, the brewery has continued to produce sake with the single-minded goal of "spreading the excellence of ginjo-shu to as many people as possible" by focusing on quality-first sake brewing with local roots. https://www.dewazakura.co.jp

Kaika Junmai Sake Arabashiri Daiichi Shuzo / Sano City, Tochigi Prefecture Daiichi Shuzo is the pride of Sano, and last year, on the occasion of its 350th anniversary, the toji (master brewer) was changed from one generation to the next. This is one of my personal favorites among Kaika. It is juicy and mellow on the palate, fruity, with a taste of rice, acidity, and bitterness. It goes well as an aperitif or with dessert. It also goes well with brandy-soaked fruitcake. The design and colors of the label are gorgeous.

The taste is derived from rice, with a numbing and bitter attack and a long bitter finish. The sweetness is moderate. If you let it sit for a few days after opening the bottle, the mouthfeel will transform to mellowness!
