Koueikiku Anastasia Green Mikazuki-cho, Ogi City, Saga Prefecture/ Koueikiku Sake Brewery Fresh acidity, green apple-like fruity taste, rice flavor, bitterness, and a medium lingering finish. Like its name, this sake reminds one of the changing of the seasons as the leaves on the trees turn green from spring to summer. Sake that goes well with May. Just before GW^ ^ ^ I'm in the mood.

It is recommended to be warmed (いたる) rather than chilled (冷や). Wrap it in plastic wrap and warm it in the microwave for about 80 seconds to give it a sweet banana-like aroma and sweetness! It is like having it with sweets. It is also sweet when served cold, but I felt it was lacking in sweetness. Warming it up will bring out its character.

BANSHU-IKKON Junmai Ginjo Aizan Nama Sanyoibai Shuzo / Shiso City, Hyogo Prefecture This is my favorite sake from Hyogo Prefecture (personally, so far)! It is a lovely sake with a fruity and juicy pear-like flavor and sweetness on the palate, going through phases of acidity and bitterness, and finally finishing with a refreshing kick. It is made from "Aizan," Hyogo Prefecture's rice suitable for sake brewing, polished to a flat rice (shagin).

Dewazakura Daiginjo-shu, Fire-brewed in Bottle Tendo City, Yamagata Prefecture / Dewazakura Sake Brewery The attack is juicy, with a slight banana aroma, sourness, and bitterness. It was just my kind of sake. [Sake Brewery Memo] "Ginjo as a global language." Founded in 1892 (Meiji 25). Kaika Junmai Sake Arabashiri Daiichi Shuzo / Sano City, Tochigi Prefecture Daiichi Shuzo is the pride of Sano, and last year, on the occasion of its 350th anniversary, the toji (master brewer) was changed from one generation to the next. This is one of my personal favorites among Kaika. It is juicy and mellow on the palate, fruity, with a taste of rice, acidity, and bitterness. It goes well as an aperitif or with dessert. It also goes well with brandy-soaked fruitcake. The design and colors of the label are gorgeous.

Koei-Kiku SNOW CRYSTAL Unfiltered Nama-shu Koeikiku Shuzo/ Saga Prefecture A very sharp and fast sake. The attack is juicy and fruity, and while you think you taste sweetness, acidity, and bitterness, it's already snappy^ ^ Personally, I would have liked a bit more of a lingering finish, but it made me want to keep reaching for the next sip and the next dish, which was interesting and endearing. Koeikiku brews a variety of creative sakes that are sure to please!

Koei-Kiku Mikumo Unfiltered Nama-shu Koeikiku Shuzo / Saga Prefecture 100% Miyamanishiki This is a new brand from Koeikiku, one of my personal favorite brands. It has a fruity pear-like aroma, sweetness, umami, and just a little bit of a splash of sizzle, and while it is mellow throughout, it also has a touch of bitterness and acidity. Daimine 3 Grains - The Winter Comes Daimine Shuzo / Mine City, Yamaguchi Prefecture This sake has an elegant rice flavor, is easy to drink with a slight effervescence, has an excellent balance of sweetness and acidity, and is full of flavor. I simply love it. [Reference Description] Just like the image of Yuki-Onna standing still. The bubbles and lees remind me of snow falling. Fresh sweetness like muscat and melon. Lively acidity with a hint of dairy gives the mid-palate a lively lift. The lingering aftertaste is like the melting of snow, fading away softly and regrettably. Mitsui no Kotobuki - Dai-harakuchi (+14) Junmai Ginjo Mitsui Kotobuki/ Mitsui District, Fukuoka Prefecture, Japan This sake has a watery mouthfeel, followed by a numbing bitterness. It is only a very dry sake, and I could hardly taste any sweetness. In addition to a refreshing dish, I felt it went well with spicy fried food. [Sake Brewery Memo] Mitsui no Kotobuki is a sake brewery located in Mitsui County, Fukuoka Prefecture.
