BANSHU-IKKON Junmai Ginjo Aizan Nama
Sanyoibai Shuzo / Shiso City, Hyogo Prefecture
This is my favorite sake from Hyogo Prefecture (personally, so far)!
It is a lovely sake with a fruity and juicy pear-like flavor and sweetness on the palate, going through phases of acidity and bitterness, and finally finishing with a refreshing kick.
It is made from "Aizan," Hyogo Prefecture's rice suitable for sake brewing, polished to a flat rice (shagin).
