Goho has been on my mind since I was allowed to drink it by a familiar owner near Osaka Tenmangu Shrine. Goho.... The jacket is stylish and looks easy to drink 😆. The rice used is "Kitsushizuku" from Hokkaido. This one is quite dry and full-bodied. The palate has an atmosphere that is not overpowered by the food, but has a pleasant aftertaste. Personally, I found it an excellent match for cheese. 😄

Junmai Daiginjo Yamadanishiki 50 ORIGARAMI Un-filtered Nama-shu This year's Denshogiku is said to be dangerous. Be careful of spilling ❣️, so I cooled it down and opened the bottle slowly, letting it acclimate to the lees. The aroma was very fruity and fermented, which is typical of orikara. The acidity and umami are overwhelming the palate! The acidity and umami rush into the mouth. The sweetness of the chrysanthemum was subtle and subdued, and it was quickly cut off at the end.

Journey back to the Wind Forest, Part 2. Today's bottle is Aizan 607. It has a subtle ginjo aroma, perhaps of grapes. It has a slight effervescence, which is typical of Kaze no Mori, and the acidity helps to tighten up the sweetness. Delicious, Kaze no Mori! As I said, this is a very easy-drinking sake that will broaden your horizons of Japanese sake 🍶. You can drink as much as you want, so be careful!

Kaze no Mori I have always loved it. How many bottles of Omachi, Aizan Junmai Ginjo Junmai Daiginjo, etc. have I had? I've been away from it for a while since they started using low milled rice such as 80 a few years ago in pursuit of more complex flavors, but I'm going back to where I started, Let's start with alpha1👍 Alcohol 13%. Aroma of apple and fizziness typical of Kaze no Mori. Akitsuho with 70% polished rice. It has little bitterness. Delicious!

Omachi Trilogy - Yeast Version Alcohol 12 Polishing rice 65 Gozenshu, a sake we have not had much luck with It is a sake from Okayama, and is made from Omachi, a famous sake produced in Okayama. It has a strong aroma due to the use of malic acid. It has the sweetness of Omachi, but also the slight complexity of 65% in the aftertaste. This was the first time for me to try this sake, and I found it to be quite a nice one.

Oriental Beauty Jihanghong. Polishing ratio: 35% for koji rice, 40% for kake rice Alcohol 14 I was very impressed with this Jipangu that I had at a restaurant before. I happened to find it at my favorite liquor store. I bought it immediately. This one also has a fruity ginjo aroma that is typical of Toyo Bijin from the start, and the moment you put it in your mouth, the sweetness spreads quickly in your mouth. The sweetness is immediately apparent on the palate. The taste never betrayed my expectations 😊. It is delicious.

The word "kanzo" is written on a large styrofoam bottle. When you break it in two, you find a cool-looking bottle of kagura inside. The bottle is not filtered at all, so it is said to have a faint, young grass color derived from koji (malted rice). Sake rice is 65% polished rice. It has a clear drinking taste that is hard to believe it is 65. It has a fresh mouthfeel and a sweet, savory, yet refreshing finish. I remember it was the No. 1 sake at a sake event at Matsuo Taisha shrine in Kyoto this spring. I am very proud of its ability and I am hanging my head 🙇.

Senzuke Junmai ROCK Unusual sake for the rocks. The alcohol content is normal at 16%, but straight up, it is quite gutsy. But when served on the rocks, Senzuke's typical sweetness stands out. This is delicious 😋. A can of Tasake! But Junmai Daiginjo! Open the bottle, smell the grapes, take a sip... The mouthfeel is sweet as you drink it slowly, and when you take a generous mouthful, the acidity is tingling on your tongue. This is my first experience with a rice called Momota, It seems to be a new sake rice, with both grandmothers having Yamadanishiki and my mother having Misanishiki. I knew that the clean sweetness of Yamada-Nishiki was king. 😁. I wonder if it will be used a lot for Akita sake from now on 😋.
