Sake in Niigata Sake rice: Koshitanrei Polishing rice 55 Alcohol 16%. Slightly grape-like ginjo aroma. Slightly fresh gasiness despite being fire-aged. Thick mouthfeel. Slowly sharp. Slightly smoky aftertaste. Interesting! It's a sake that you can't help but drink in a calm, relaxed mood. I think a bottle will be gone soon.

Sake of Saitama Polishing rice 50%. Sairai is a famous sake, but for some reason you can't find it in the Kansai region. I was surprised to find it in a liquor store I know. ‼️ I bought it immediately. Speaking of Saitama, there is my favorite sake, Hanahayo...it has the same freshness and a little bit of a splash when you open the bottle. The aroma is cider-like, and when you put it in your mouth, the acidity is a little tangy, followed by the umami with a hint of sweetness. As the label says, enjoy the harmony created by the elegant ginjo aroma, the sweetness of the rice, and the color of the fine acidity. Katsuma is a famous sake from Toyama! It was hard to find, but we got it in line. It has a hint of apple aroma and is soft on the palate, with more umami than sweetness. My junior colleague got in line 10 minutes after me, and I can see why he loves it so much 😊. It's not too assertive, but it's a great supporting player for a good Japanese meal! 😍

Sake from Himeji, Hyogo Prefecture. 100% Yamadanishiki 17% alcohol by volume Sake given by a friend It is written that this sake has a long history of creating the culture of drinking sake chilled, which seems to be a common practice nowadays but did not exist until then. The aroma is melon-like and wafts from the moment it is poured into the glass. On the other hand, when you put it in your mouth, you can taste more umami than sweetness, and of course, it has a clear taste and a nice sharpness afterwards. Halcion 14% alcohol by volume The first time I drank it 2 years ago, I was shocked at how good it was. 😱 This year's sake has more of a grapefruit-like citrus flavor than before, and I found it to be more skilful and sharp than sweet. It is a swishy type that does not make you tired of drinking. It also tastes exactly the same as the sake I'm drinking with it, and the comparison between the two is unbeatable😍. I never get tired of it.
