It starts with a moderate sweetness, followed by a rich and unique flavor and acidity that spreads in the mouth. The gasiness is also a bit strong. It is not the type of sake that leaves a strong aftertaste, so it is easy to drink, but more than the ease of drinking, I was impressed by the perfect harmony of sweetness, umami, and acidity. I felt that the flavor weakened a little after a few days after opening, which was my only disappointment.
Since it is 5% alcohol, there is almost no alcohol taste, and the drink has a firm sweet taste followed by a sour taste. If I were to use an analogy, it would be like Calpis soda with lemon flavor.
The fruity sweetness spreads in the mouth, then subsides like a wave receding, and finally a little bitterness appears. The taste is strong, but the aftertaste is so refreshing that you can drink it as much as you want. The sweetness is somewhat pineapple-like.
Clear taste. After a hint of gentle sweetness, the acidity gradually emerges. Personally, I prefer a sake that is a little more assertive in its flavor, but it is very sharp and easy to drink.
It is sweet and delicious. The fresh sweetness is well balanced with the umami that spreads slowly afterward. The umami flavor is further emphasized when the rice is mixed with ori.
The sweetness and umami, which are not strong but have a core, come out at first, and then gradually change to bitterness. The aftertaste is clean and refreshing, so you can go on drinking, but the flavor is not weak.
Thankfully, there are many sake that have a wonderful harmony of sweetness and umami, but this Hanaizumi is really interesting to drink because of the way the sweetness and umami spread out at the same time. The sweetness is light on the tongue, and at the same time, the umami spreads from the throat to the entire mouth at a very fast pace. This sweetness and umami are neither light nor cloying, but just right. I don't think you can find this sake very often outside of Fukushima Prefecture, and this acquisition was quite a coincidence, but I think it is a sake that should be sold more often.
The first Kido. I thought it would be dry because it is from Wakayama, the same region as Ryujinmaru, my favorite sake, but it was completely different. I felt the fruity sweetness quite early on, and it was mixed with the deliciousness of the rice. The aftertaste is not that persistent.
Immediately after the slightly moderate sweetness is felt, it changes to umami and bitterness and spreads in the mouth. The umami and bitterness gradually fade away, and the aftertaste is neither too light nor persistent.
This was my first time drinking Eiko-Fuji, but it was unlike anything I had ever tasted before. It is not rich in flavor, but has a sweetness and umami that is somewhat reminiscent of chestnuts.
On the day I opened it, I felt it was too easy to drink and rather unsatisfying, but as the days went by, the fresh, light sweetness like muscat and the flavor that oozes out gradually came out at the same time. The drinkability is the same, and the aftertaste is not too strong, but the flavor is very assertive.
The taste is a good combination of fruity sweetness and a bit of bitterness. The taste itself is gorgeous, but not cloying, and the aftertaste recedes quickly, so I think it is both pleasant and easy to drink.
(It may just be my imagination.) The slightly gaseous texture on the tongue gives the sake a delicious flavor mixed with a bit of sweetness characteristic of Kangiku. The combination of the gaseous texture and umami flavor on the tongue makes it quite drinkable on its own.
It is difficult to say what kind of fruit it is (pineapple and muscat are both a bit different), but I felt a fruity and refreshing sweetness first, followed gradually by a rich flavor unique to Kangiku. It is not as rich as other chrysanthemums, and seems to be in good harmony with the freshness.
This sake has a refined sweetness, as if only the sweetness was extracted from the taste of strawberries and the rest was stripped away, combined with the robust umami of the rice. The sweetness and umami come at the same time, yet they seem to be in perfect harmony. The gorgeous and elegant top-fragrance before drinking was also quite impressive.
