Last weekend, a friend of mine informed me that the limited edition Kaze no Mori was available at a local liquor store! So I immediately bought it. The five microorganisms are yeast, yellow yeast, lactobacillus, Pichia sp. and white yeast. The sake rice is 100% Akitsuho rice produced in Nara Prefecture, and the rice polishing ratio is 50%. The alcohol content is 14 degrees. I'm not a fan of fizzing, so I gulped it down a little after opening the bottle. It was delicious.

Purchased on my way back from a business trip to Tokyo until yesterday. You can't go wrong with 寫楽's Omachi. 100% Omachi from Okayama Prefecture, 50% polished rice, 16% alcohol. It's a very easy drinking sake. I can drink it easily.

R-type won the second choice of the sake brewer's Shinsei lottery, along with bamboo shoots I dug up from the bamboo grove yesterday, stir-fried with garlic and soy sauce. It was delicious. Himi yellowtail has become much cheaper in spring. 100% Akita rice (harvested in 2021), milling ratio: koji rice 50%, kake rice 60%. The alcohol content is 13 degrees. It will be drunk up in no time.

Eden. Before Corona, I used to recommend this brand when I entertained people in Toyama, but I personally could not afford to buy it. It is my friend's favorite brand. To be honest, I remember not liking Chiyotsuru, but Eden is quintessential. Made from 100% Tominokou from Namekawa, 60% polished rice. The alcohol content is 18%. I think the alcohol content is high, but that is also Eden's character. Limited edition of 1700 bottles. Also, this bottle is 900mL, so you can drink it well!

I bought it on my way back from a business trip to Tokyo because "Sake-no-wa" recommended Amami. It is certainly to my liking. The rice polishing ratio is 60%, and the alcohol content is 15%. It is so easy to drink that I end up drinking too much... I'm not sure if I like it or not, but it's a good sake.

Senkin's Bizen Omachi. Nama-shu, limited brewing. The label on the back says it is made for juicy acidity and clarity. I was looking for a sake with 14% alcohol by volume, which I recently found to be exquisite, when I came across this one. And since it is Omachi, I bought it and opened the bottle immediately. It was delicious. I think I prefer it to the Senkin I drank before. It goes down so smoothly. It is made from 80% Omachi and 20% Yamadanishiki. Polishing ratio: Koji rice 50%, Kake rice 65%. It is unfiltered, unfiltered, undiluted sake. Serve with father's favorite Kurozukuri.

I went to the liquor store to see if they had any Sogapale in stock after reading the other postings on Sake-no-wa. 1,2,3 were available, and the one I hadn't had was... I looked it up on the spot, and it was "Do". 100% Miyamanishiki from Nagano Prefecture harvested in 2022, 59% polished rice ratio, 14% alcohol content. I knew it would be good. This one.

Yesterday, I went overland from Shin-Yokohama to Hakata and then to Toyama. Fuji was beautiful on the way, so I took a quick shot. On the way, I searched for "Sake-no-wa" in Fukuoka Prefecture, and this one showed up, so I bought it. It is made from 100% Yamadanishiki produced in Itoshima, with a rice polishing ratio of 65%. The alcohol content is 14%. It is said to be a new standard in Fukuoka. The alcohol content of 14% is exquisite. It is light, clean, and very easy to drink. On my way home from work, I went to a liquor store in search of a low alcohol sake. I bought a bottle of "Mimuro Sugi" which "Sake-no-wa" displayed as a recommended candidate (I was also attracted to Kido's Omachi...but...my original intention!) ) I was also attracted to Kido's Omachi, but...my first choice! It is made with Omachi and Yamadanishiki, 60% polished rice, and 13% alcohol. It was easy to drink and was quickly emptied. It has a slight gassy feeling after opening. We had it with seared oysters. It is a very good sake.

Since Akeno Wing was "orikarami", I bought another bottle of junmai sake that seemed to be the standard. It is made from 100% Tsuyahime, with a rice polishing ratio of 70%. The alcohol content is between 17 and 18 degrees Celsius. I didn't know it was possible to brew such a sake with Tsuyahime. It is fruity and has a sharpness of alcohol.

Wandering around Yokohama station for the first time in a long time, I missed it. But it's changed...it's been under construction for a long time. I went to the basement of Takashimaya to look for sake... Eikoufuji was there. I bought it immediately. This is my first Eiko Fuji. It is made from 100% Haenuki rice grown in Yamagata Prefecture, polished to 65%, and has an alcohol content of 16.9 degrees. I thought I was not good with lees, but it is refreshing and has just the right amount of sweetness.

I also received this small bottle as a souvenir from Akiu Onsen for my parents. The rice polishing ratio is 55% and the alcohol content is 15%. The sake has a strong flavor of rice, yet is free of any cloying taste.

I had drunk Hwangsuisen before and liked it so much that I bought a bottle of Kafuda-shu as a gift to my parents' house. This time, the brand name was Gekpaku. It is made from 100% Yamadanishiki produced in Okayama Prefecture, with a milling ratio of 40% and an alcohol content of 15%. It has a light but gorgeous and complex flavor. Kachikoma is Junmai sake after all. We were able to obtain a limited bottle of pure sake. Polishing ratio 50%, alcohol content 16%. We had it with oden (Toyama oden) from Yattoruzo Gojo, which was recently introduced on the Kenmin Show. Oden and sake is a great combination.

Made from 100% Tominokori, Toyama Prefecture's preferred rice for sake brewing. Polishing ratio 60%, alcohol content 16%. The combination of Haneya and Tominokori is a no-brainer. The freshness of the unpasteurized sake immediately after opening the bottle, and the mellow taste once the bottle has cooled down a bit. It is delicious.

We were able to purchase Hiragana "Kachikoma" again this year. It has an alcohol content of 18 degrees. It is a popular sake, although it is not pure rice. It is served with seared sweet shrimp and Spanish mackerel from Uozu (today is Friday).

Junmai-shu by Kibanano Brewery, brewed with Sagara Shuzo (Tochigi Prefecture) as the manufacturer. It is made with 100% Munakata rice from Fukuoka Prefecture, with a milling ratio of 80% and 17% alcohol by volume. I was curious about the bottle design and the fact that it was "doburoku," but from sake. ...17 degrees of alcohol, bitterness and acidity. It also has a slightly old sake-like feel.

This is an original sake (the second one) from Liquor Shop Yoshida, a liquor store in Toyama City that I have been interested in for a while. It is not just a PB with a new label, but the recipe is also different from the standard one. Incidentally, the first batch was brewed at San-Shoraku. Using sake rice from Toyama Prefecture and yeast from Hokuriku, the brewery aimed to create a food sake that would not become boring to drink while maintaining Haneya's typical glamorous flavor. It was just right when served with nabe and other dishes. Sake rice: Gohyakumangoku from Toyama Prefecture, 60% polishing ratio, Junmai Ginjo, 16% alc.

I was looking for a sake to drink at my parents' house for New Year's when I found Shinmasa. Since my parents are elderly, I thought it would be better to keep the alcohol content low, so I decided on this one, even though it is not a Toyama sake. The label says it all: "Aromas of ripe citrus fruits, plum, and jasmine. The taste is mellow, sweet and refreshing at the same time, just like the cosmos. Alcohol content: 13%, 100% Akita-produced Kaiyoshinko; milling ratio: 55% for koji rice, 60% for kake rice.
