Senkin's Bizen Omachi. Nama-shu, limited brewing. The label on the back says it is made for juicy acidity and clarity. I was looking for a sake with 14% alcohol by volume, which I recently found to be exquisite, when I came across this one. And since it is Omachi, I bought it and opened the bottle immediately. It was delicious. I think I prefer it to the Senkin I drank before. It goes down so smoothly.
It is made from 80% Omachi and 20% Yamadanishiki. Polishing ratio: Koji rice 50%, Kake rice 65%. It is unfiltered, unfiltered, undiluted sake.
Serve with father's favorite Kurozukuri.
