It is said to be an irregular sake. The toji-san overfilled it with 4-stage rice or something😅. The "Raku" on the label represents the over-filled rice, and the blue color represents the pale face of the toji-san. Gutsy, but quite sweet and sour. It is much sweeter than other Raku no sei I've had, but I also feel its character. The rice is from the terraced rice fields of Hida. I can't seem to name the rice, but I wonder if it is Hidahomare or some other rice that is only available in Gifu. I heard that if you mention the name of the rice, you will get complaints like Kamerei did in Hiroshima, but if you don't mention the name, it's OK.

I had always wanted to come to this restaurant, Jyu. It was a nice place. The sake I chose was Dokure, which is labeled as an amazing sake from Kure. Purchased at Yokohama Takashimaya Rice used is Kame-no-o type Koshihikari produced in Kasama City The alcohol is a little strong, but the taste is smooth and not like an unfiltered draft. Cold sake. Sake from Japan's oldest sake brewery. The color is a cloudy light yellow. The aroma is faintly of cooked rice with a hint of myrin. The first sip has a mild aroma of cooked rice with a honey-like sweetness. The aftertaste is crisp and light, leaving a dry aftertaste on the tongue. This sake was given to us by a visitor to Kobayashi Sake Brewery in Niigata, which is famous for its signature Akita dog. It is slightly sweet and has a subtle rice flavor, and although it was made in December 2010, it does not have an aged feel and is refreshing and easy to drink. It has a slight peach and lactic acid flavor. I think it is one of the most delicious alcoholic sake.

I'm sorry, I don't know this brewery...but they have hiyaoroshi and yamahai. So he shared his favorite hiyaoroshi with me! It's easy to drink, has a nice mouthfeel, and is dry with a nice flavor and sharpness. It's also delicious and reminds me of a white wine! The Nouveau chosen by the owner this year was expensive... but he said he had no choice because of the weak yen and the international situation.

A drinking friend of mine wanted to drink a bottle of Takezuru by Toshi Ishikawa, who has moved to Tsuki no I. So I agreed to accompany him. We had it heated. The first aroma is like a matured Shaoxing sake. The first sip had a matured Shaoxing sake-like aroma, and the second had a mildly sweet taste with a Shaoxing sake-like acidity and umami.
