Good evening, it's 18 Mori from Okayama prefecture in your first series ✨. We've had a few Asahi rice sakes, but what about this one? First, before the ogara-mi, the pinapple and the gas are combined with an impressive bitterness on the back end 😋😋😋😋😋😋😋. After the ogara-mi, it is silky and full-bodied and even more delicious 🤗 The rice is different, but it's somewhere between Kahayohaku and Sanchi 💮.

Last weekend I was out of sake to go with oden, so I went to the local supermarket and bought a 300㎖ bottle for the sake. It has a sweet and refreshing taste. It's good at hiya, but it tastes even better when it's warmed up to human skin temperature to increase the sweetness. However, I thought it would be too clean to pair with oden. I chose this sake because I wanted to keep it light, but.... If I wanted to warm it up, I could have used a more robust Junmaishu or even Honjozo. I'm still learning💦.

On a trip to Shiga, I visited Hirai Shoten. The quaint appearance of the store and the display of products were a sight to behold. Today's bottle was the "Sake Brewer's 3003000 Year Old" (pictured left). The aroma is melon, apple, and pineapple, and the first sip is a punch. It has a mellow sweetness, but the acidity and bitterness make it crisp and refreshing. Delicious. Well, Shiga Prefecture was fun! I'm also looking forward to Kosetsu (I heard it's read as Fouche) on the right side of the photo 😄.

The lid opens quickly. Lactic acidity, savory smell of rice. Apple, umami, refreshing acidity, not too forward sweetness, plum-like acidity swells. Delicious on its own. I am a fan of baby star with hot water, but this time I left it as it is. The taste of the baby star matches the deliciousness of the sake, and the sake envelops it nicely. The combined aftertaste is irresistible. It is so good that I would buy it if I tasted it.

Origuchi Sake-ten suddenly started taking reservations for Wakabisu, so I went to make a reservation last week and received it today. The rice is Kami no Ho. I didn't feel any gas, but there were lots of bubbles in the glass. I was told it was a food type wine, but it was more fruity and pineapple-like than I expected. It's not flashy, but it's delicious with a moderate sweetness and flavor. Wakabisu sake brewery is close to Aoyama-cho station, so you can go there by train 🤔.

At Izakaya It has a gorgeous ginjo aroma and is fruity. It has a nice lingering finish with just the right amount of umami and acidity. Rice: Hitomebore produced in Gunma Prefecture

The rice polishing ratio is 35% following the previous 50%. This sake is brewed with Gohyakumangoku from the brewer's hometown. It is sweet and sour, with a slight bitterness. My favorite type. It's good, I want to drink it again.

This is the second of two bottles of Kantou no Hana (Kanto no Hana), Junmai Daiginjo, purchased at the direct sales store of Sei Shuzo where we stopped on our way back home. The label is the same as the first bottle of Junmai-Daiginjo-Active Sake, with three-dimensional foil-stamped letters on a raised surface. As the label on the back of the bottle says, this nama-zake seemed to be a limited edition for direct retailers. As soon as the bottle is uncorked, it has a sweet and fruity aroma. When poured into a glass, the color is pale yellow. As is typical of nama-shu, tiny air bubbles drifted in the air, giving the impression of freshness even visually. The aroma is a gorgeous ginjo aroma. From the aroma, I imagined a modern taste, but when I drank it, I was surprised to find that it also has a classical flavor. It has a strong umami flavor with a mild acidity, so it does not feel heavy. The classical sake character seems to come solely from the crisp alcohol taste. The bitterness and astringency are kept in check, and the lingering aftertaste is faint and fades away due to the clear flavor with little clutter that only a daiginjo can offer. Like the Junmai Ginjo Activated Sake, this Junmai Daiginjo is a sake with a wide range of characteristics. It was a bottle that made me suddenly interested in other sake made by Seishuzo.

I had my first bottle of Shinshin in spring and it was delicious! I was able to get a bottle of Shinshin's summer sake, and I immediately opened it 😋. Slightly sweet and refreshing taste like summer sake🤣. It's as refreshing as the label says and perfect for a hot day like today 👍 thanks for the drink❗️

The sourness that is typical of a traditional sake brewer spreads out and you can't help but sigh 😚 When it gets cloudy, you can enjoy the flavor of the rice and the tingling dryness together☺️. It was a good stimulus for my tongue, which has been used to sweet sake lately. This may be the best Nara sake to pair with Kakinoha Sushi👍.

Sakushu Musashi Kenkou Gekkou Gekkou Gekkou Ultimate Daikarakuchi Genshu This is a local sake from Mimasaka in northeastern Okayama Prefecture, the birthplace of Musashi Miyamoto! As the name implies, it's very dry 😆. Sake degree +28 or higher, this is no joke! It is a very assertive sake, so it goes perfectly with a local dish of Okayama, "boiled yellow chives", which is a habitual dish of Okayama 😋. Onra Yamadanishiki Junmai It seems to be named after an ancient demon from the Kibi region in the southern part of Okayama Prefecture! Kokuwaku 😱. 80% polished Yamadanishiki produced in Kume Minami-cho, Okayama Prefecture. Dry taste Grain taste Slightly old sake aroma Personally, I didn't like it 🥲. Sanzen Yamahai Junmai Omachi Nama-nara Sake This is a sake from Kurashiki. Made with Omachi, the pride of Okayama Prefecture's sake rice. Not fruity, but umami type. It has a classical grain-like taste. The acidity is unique to the Yamahai brewing process. Thick and rich. When we went to Kurashiki, she rented a kimono and we went for a walk 👘.
