Purchased at a local supermarket I didn't have such high expectations, but it has a fresh, fruity flavor with a strong umami. It also has a nice sharpness. It was a cosy evening sake. ❗️

Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka⑤. The booth of "Kaze no Sato" in Ehime. After suffering tremendous damage from the torrential rains in western Japan in 2018, the brewery decided to revive itself with the support of local people, fellow members of the sake brewers association, and volunteers. The brewery has recovered through crowdfunding and other means, and this one is also not to be found in the Kansai region. Junmai ◉ Junmai The aroma is a bit peculiar. It may be an off-flavor. The flavor is firm and a bit nutty. They say it is recommended to be heated. Junmai Ginjo Not too much sweetness and umami, but a mild acidity. Junmai Daiginjo Uzu The aroma is a little subdued, and the sweetness and umami are refreshing, the type of sake that goes well with river fish. Junmai Ginjo-shu Sakurahime A junmai ginjo-shu brewed with Sakurahime yeast. It has a clear, sweet and umami taste with a clean and refreshing aftertaste. When I told him that Sakurahime yeast is not cherry blossom, he said yes, it is a flower called delphinium. The Ehime booth was set up by the sake brewers' association, and everyone was wearing the same shirt, light pink vest and pants, which bouken-san said looked like Junrei.

Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka - A Spectacle of Sake and Food from Shikoku - (5) Ehime Prefecture from here Sake brewery severely damaged by torrential rain in western Japan. We drank Kaze no Sato Junmai-shu Matsuyama Mitsui Polishing ratio 60%, EK-1 yeast, Sake meter value +7 I thought it would be a classic type of sake, but it's quite modern. Rice flavor and a bit of fruitiness. The taste itself is nice, but there is something strange about it... Kaze no Sato Junmai Ginjo Shizuku Ehime, Polishing ratio 50%, EK-3 yeast, Sake meter value +6 A juicy sake with a firm sweetness. A little pineapple 🍍. The most delicious 😋. Junmai Daiginjo Usu Yamadanishiki, Polishing ratio 40%, EK-1 yeast, Sake meter value +8 It was refreshing and gorgeous, but delicious! It had a berry-like flavor. All of the breweries here have high sake strength, but it didn't feel too spicy. Kaze no Sato Junmai Ginjo Sakura hime Shizuku Ehime, Polishing ratio 50%, Sake strength -4 Sakura hime yeast "Type2 Clear" is used. Slightly floral. Refreshing sweetness.

☀️ This is the first brand of sake from Ehime. There are glimpses of rice floating around 🌾. The ori is sturdy and doesn't seem to dissolve fully🤔. There is no sweetness and the rice flavor is more pronounced 🌾🌾🌾🌾🌾🌾. In addition to the nigori, the rice is dissolved to the point of being sludgy, but thanks to the microcarbonation, it passes down the throat better🫧🫧🫧🫧🫧. I took the opportunity to order a gibier that I don't usually eat called "ginger roasted wild boar🐗" and got the most delicious meat🥩 with a mix of the sweetness of the ginger, the flavor of the rice and the bitter after taste😋.

I see that it is read as "Sekepikozan". If I had not drank this sake, I might not have been able to read it correctly for the rest of my life. The taste is fresh and quite rich. The bitter bitterness comes out in the back of the mouth, and the taste is sharp and clean. The sweetness is modest for Aizan, and although it is not the modern type of sake, the umami flavor is very well conveyed. Not bad!

I've been wanting to try this one for a while...they use 1801 yeast. It's gorgeous and fruity. It's also quite sweet. I think it's the most gorgeous of all the Yukihiko Yama brands. This was over 2,000 yen at a certain izakaya in Osaka, but at a nearby liquor store it was 1,980 yen🙄. I wonder what it is? I heard some breweries and stores add shipping costs 🤔.

Sake opened at a remote off-line meeting (3) I was asked "What is the best sake you drank this year? I answered "Aozora", but later I remembered that it was the future of sake from Akabu newborn 🤣. By this time I couldn't even remember what it tasted like, so I checked again the next day. The rice used is 100% Benkei. It is a kijoshu, although there is no description. As it says, it has a thick sweet taste. Sweet and sour. I can only drink a little at a time because kijo-zake is so thick. This sake is brewed by Umeshiki Yamakawa, a subsidiary of the major sake maker Hakutsuru Shuzo. In recent years, Hakutsuru Shuzo has purchased a number of breweries from across Japan. The Aomori-based brewer Momokawa, which uses Hakutsuru Nishiki, is also a subsidiary company of Hakutsuru Shuzo. Not much of an aroma, slight whiff of alcohol. Dry, watery and clean on the palate, with little umami and a slight alu taste. After drinking it, it has a light throat feeling with a faint sweetness. It is a standard shokuchu sake. For the snacks, we had stewed kalbi and root vegetables, mussel pickled in soy sauce, chili bonito sakutome, and baby star ramen with the flavor of kondashi. It goes best with sakabuto, which enhances its sweetness.

Purchased at a supermarket in Karuizawa. I did not expect much...but I experienced the power of Nagano sake🍶...aroma: a faint sweet aroma of rice, a clear sweet bitterness...the bitterness is just right and does not bother me...it is delicious😋...but it is also delicious😋 when drunk as is... ...but it really comes into its own as a food sake! It's a very beautiful sake that doesn't interfere with food 🍶♪ I'm sipping it with a side dish of inada I caught in Sagami Bay 😋♪ This is delicious 😋♪....
