No longer slightly carbonated! It has a full, rice-like sweetness, probably due to the 60% rice polishing ratio. However, as I drank it, I felt it was an elegant sweetness. In addition, the acidity is refreshing. At 9% alcohol by volume for an unpasteurized sake, it's surprisingly low! You can drink as much as you like.
