This sake was purchased at the Tokyu Hands Tohoku Fair last month. I opened the bottle after drinking all the Miyaizumi. It has a gorgeous sweetness that rushes in from the first sip! It doesn't have the aftertaste of raw sake, and it goes down nicely. It's definitely good. This sake is brewed from 100% Akita Sakekomachi polished to half its original strength. Tonight we will drink it at home. I have a bad feeling about this...

I was able to drink the sealed bottle. The taste is fresh and clean, just as the label implies. A little fruity. It seems to be once-fired, so it still tastes fresh.

I was told that Tenju Brewery makes sake as a hobby and that it will never be the same again. It is also very piquant. It has a good balance of fresh acidity and sweetness. I have never had Chokaizan, but it made me want to try it next time. It seems to be totally different, though.

This is the Aino-sato Junmai-shu from Nanyo Jozo, which is famous for Hanayo-yoku. It's a delicious sake with a good balance of umami and sourness, like a fresh apple. It's delicious 😋 and the price is good too. The price is 1320 yen for a four-pack.

Is this a local brand of the same brewery as Hanayo-yoku? The rice is said to be Gohyakumangoku. It's a completely different brew, but it's refreshing and has a gorgeous taste. I had an image of it being classical and hard to drink, but it's a modern sake with impressive acidity. The one I drank recently that is similar is GOGO Gohashi. Gohashi has a muscat-like atmosphere, and this one has a green apple-like atmosphere.

2024 Spring Evening - Tasting New Sake - 18Last. Yoshinotomo Junmai Ginjyo Nama Nama Sake Tominokou As I recall, it is a current sake with apple blossom yeast. I heard that there were 40 kinds of sake at this banquet, but only 18 made it to the end. Each brewer's brewing water was also offered as a Wakarimizu. Kawazu-zakura yeast ALL Kanagawa sake 🌸 I found Ryo for the first time in about 2 years and bought it 😊. The bottle is light pink and gorgeous to look at❗ The rice used is... "Wakamizu"! I've never heard of that rice name before 😅 Slightly effervescent, sour-sweet, and just as it looks when opened. With the preconceived notion of Kawazu cherry yeast, it reminds me somewhat of cherry 🍒. I drank the Kinuhikari Ver two years ago, and the reviews I see now seem to indicate that it was rated reasonably highly at the time. I guess my tastes are gradually changing because I don't like the taste now 😁. I think the easiest thing to pair with this kind of drink is cheese 🧀. I'll have a toast by myself with some granapadano I had at home 🥂.

October 31, 2023 Japanese Sake and Japanese Cuisine at Miketsubi in Matsuyama City. The 7th glass was served on recommendation with rice and hops. It has a clean and gorgeous taste with acidity and a pleasant hop aroma. The aroma of hops is pleasant. Pione and Cheinmuscat. I enjoyed it with Pioneer and Shine Muscat.

Chiyonohana! Sugihara Sake Brewery's opening sake 🍶. It is made from this sake every year! The brewer told me that it might be astringent right after opening the bottle, but I still feel the astringency behind the sweetness! At first, I drank only one sake and left it for 5 days! The sweetness and deliciousness spread 🥰🥰🥰🥰🥰. I guess I should listen to the brewery's opinion carefully 👂👂👂. The dharma figurine called Sugihara Dharma was gone before I knew it! I wonder if something will be displayed again 😃.

Ibaraki Pref. Sashima-gun. Hagiwara Sake Brewery Co. Toku-masamune Junmai-shu. We received a set of seven single-bottle bottles, so we will drink them. Here is the sixth bottle. I didn't think I could drink it again since I drank it at the Japanese Sake Festival. I will drink it cold. The color is clear with a yellowish tinge. The nose has a slightly ripe fruity aroma with hints of honey and caramel. On the palate, a slight ripeness aroma passes through to the nose, followed by a gentle Junmai-like dry acidity. It has a slightly aged feel, with concentrated umami, a chocolate-like flavor, and a faded brown rice-like aftertaste that lingers on the tongue. Nice Masamune that has matured quite nicely. Ingredients:Rice(domestic),Rice Koji(domestic) Polishing ratio: 60 Alcohol content:15
