Tasted here also at Hankyu Department Store. Junmai Ginjo-shu made with Kuzuryu. It is a refreshingly dry sake, but has a sweet and fruity taste. This time I bought a bottle of unfiltered raw sake made with Jinryoku.

Tasted at Umeda Hankyu Department Store. The rice was said to be Gohyakumangoku. The quality of the sake is clean and refreshing for hiyaoroshi. It is easy to drink without a sense of maturity. As the person in charge said, it is a quiet type of sake, so I think it is suitable for a mealtime drink.

It looks like all of them use locally grown rice, as did the two types of Kitanosho I posted the other day. It seems that only Ryu-ryoku and Koko use Jinryoku all the time. I'm sure there are other places like Okura that use it for single use. When I tasted it, my impression was that it was quite sweet and the second half was heavy, but it was smoky and the flavor of the rice came through with a bang. It has a strong bitterness at the end. It is not the type of sake I would drink on its own, so I will have to wait and see. I don't think it should be chilled too much. If you like Shimane or Tottori area sake, this would be good for you. I think it has a quality of sake that would not be affected by letting it sit for a while. There are glimpses of sweetness and a fruity atmosphere, but I wonder if it's basically more of a classic. Is it a multi-faceted, multi-personality sake?

I've been curious about this brand for a while. I heard it is unfiltered. It is gorgeous and fruity. It is refreshing. I wonder if the spiciness gets stronger as the temperature rises. I heard that there is a draft version of this, so I would like to try it.

It is sweet and round with a little rice flavor. It has a sweet, round, mature taste with a slight riceiness. When heated, the aroma and umami spread I personally prefer it warmed to lukewarm. Personally, I prefer it lukewarm. It is delicious with bonito sashimi, grilled fish, and I enjoyed it with grilled bonito sashimi, grilled tempura fish, and sweet vinegared sea bream, etc. I personally prefer it warmed up.

Shizuoka Sake Tour. Gotemba's Kinmei Ryotama Junmai Ginjo, alc.16%. When served in the refrigerator, it has a subtle cider-like aroma. The aroma does not change much in the mouth, and after the alcohol and weak acidity, the umami of rice comes easily. The aftertaste is stimulated by alcohol, but it is not an unpleasant attack, but rather a strange numbing sensation and heat. There is no significant change even when the temperature is set to room temperature. Should we wait a few days? Two days later, the alcoholic stimulation has disappeared, and the umami of the rice has become noticeably mellower. The aroma is still cider-like, so the overall impression is that it is a cross between sake and mead. This is good.

Weighty
Taste of the Ancient Times Aroma reminiscent of old wood and steamed rice. The sharp mouthfeel is followed by a tangy, pungent taste. The taste is full of alcohol with a hint of umami, and finishes with a lingering pungent and astringent aftertaste. It gives the impression of good old tradition. It tastes like an old house. We would like to support this brewery as it is the nearest brewery to Okayama. ★★★★

Bizen tasted Ichinomiya sake. The labeling was a bit dubious, with no indication of rice polishing ratio or alcohol content, and "Junmai Daiginjo" pasted on the label after the fact... The taste was fresh and light. The taste was fresh, light, and refreshing.

Obtained at a brewery festival. Sourness and bitterness on the palate, with a hint of ginjo. I guess it's not my favorite sake...

The taste is rich and drinkable, and the flavor has a slight sweetness afterward. Sake from Mikawa is served at a restaurant near the sea that is open from morning in Mikawa. It is the best.

⭐️⭐️⭐️ I chose to have a refreshing drink on consecutive summer days. Low al and strong gas. I was careless and spilled a little. It was a light sake and a little unsatisfying, but at this time of the year ⭕️ I enjoyed the medium fatty tuna and the rock mozuku 😊.

Kansai Sake-new year party ㉔ After a short cab ride, we went to Chuin-san, familiar to us from Aladdin-san's post. Inokashira, a sake I had never heard of until now😅. The rice used is Hitogokochi. I think it was fresh, fruity and gently sweet 🤔.

Classic firm aroma. The strong sweetness is not fruity, but the taste of the rice itself. The flavor is also strong. A direction of Hitogokochi that I did not know.

Is the rice used Miyamanishiki? The acidity is pleasant! It is sweet and sour, but also has a bitter taste. It also has an apple-like flavor. It was an interesting sake.

It was my first time to try Usuzakura. I missed the chance to buy nama sake, so I bought hiyaoroshi. The rice is Ginfuki. It has a relaxed atmosphere. The aroma is a little fruity. It has a mild sweet umami taste. Is it sweet among the Hiyaoroshi?

When it gets cold, I want to drink hot sake. Speaking of hot sake, I also like sweet sake, so up until now I had been drinking brewed sake from Ofuku. But when I saw a bottle of Harazake at the store, I thought I'd give it a try. It was quite sweet, and it was junmai, and I don't know what that means, but it was called hara-sake. I thought I would choose Yamadanishiki for sweet sake, but I was wrong.
