It has been a long time since I have been to Sogen! When I went to Kanazawa in March this year, it was already gone, and when I went one more time in September, there was a line at Kanazawa station, but only a little. It has a deep, rich, pungent flavor. But it also has an atmosphere like molasses. I love Sogen!

I love southern sake! It is made with apple flower yeast. It's gorgeous, but the yeast makes it tighter. It's fruity, but not too strong. I don't like Daiginjos, but this one was great!
