Chidori Masamune is a Japanese sake from Sanda City! It is packed with umami, and although brewer's alcohol is added, the lingering aftertaste is amazing! Even when heated, the flavor is outstanding, and it is the best of the best!

Salmon Monogatari in Kansai ③. Chidori Masamune is a sake that is rarely available in Hyogo unless you go to the brewery. The head brewer of the brewery was there. The previous and current brewer are both graduates of Tokyo University of Agriculture, so they also produce red rice sake. The rice is also grown in the company's own terroir. The sake is pressed by the Yaegaki method, not the Yabuta method. We drank Mita Ichi Junmai Namaishu I thought it would be a classic type, but it had a nice aroma and was quite sweet. It was sweeter than the Mita Shibori I drank before and I liked it. Mita Mita Fukuda Junmai Daiginjo It has a classical taste with a strong graininess. It is not like a daiginjo and is not very subtle... There were people waiting behind me, so I couldn't talk much with them, but when I asked them if Hamadaya carried it, they replied, "Yes, Hamadaya does. I said, "Wow! I got a great reaction from him. He said that for some reason, they carry it there 🤣why is that 😅?

Sake from Sanda City, Hyogo Prefecture. Yuzu bought in March. Along the Hazukagawa River in the northern part of Sanda. The brewery is located not far from the clear Hazukagawa River. Today it is served cold. The taste of clear, pure water. It reminds me of the clear stream of the Hazukagawa River. The full, rich, sweet flavor spreads immediately. It is clear, but it spreads firmly. A moment later, a sharp spiciness passes through your nose. This spiciness is strong. The spiciness disappears as it trails off with a full umami and a cool, clear, water-derived coolness. The clear taste in the mouth through the whole process is the best. How about if you heat it up? It's like a big, fast spinning wheel on the tongue, with all the flavors spinning around at a brisk pace. It is refreshing, but the aroma that comes out when it is warmed up doesn't seem to go well with snacks. Let's drink it cold and drink it honestly.

The alcohol is too strong to tell, but it has a slightly peculiar, spicy, dark flavor. The acidity is strong and goes well with food. I would like to try Junmai.

Sake from Sanda City, Hyogo Prefecture. Purchased at the brewery. The person at the brewery was very nice. I have to go back to buy some more. Mild hinekoso aroma. The sharp sweetness comes in sharply and is immediately followed by a refreshing spiciness. The hinekoso keeps the conflict of flavors at bay. Dynamic flavor. It is like an old-fashioned sake. How about when it is warmed up? The hinekoso has a slightly flowery aroma. The sweetness comes. Riding on the flowery aroma. It goes in smoothly. It's quite good as a heated sake. For those who don't like the hineyoshi aroma, I would recommend heating it up.

This sake is distributed almost exclusively in Sanda City, but I bought it at Hamadaya in Kobe. It seems that Chidori Masamune is also available at Aeon and Okuwa in Sanda City. Aeon is very proactive when it comes to sake breweries in the area, isn't it? Aeon in Ibaraki has a lot of Nakao Sake Brewery's sake. There is another sake brewery in Sanda, Yasui Sake Brewery, but they don't brew their own sake anymore. It's deep in the mountains in Sanda, so you have to drive or take a bus to get there. It's near the outdoor activity center where I went when I was in the first grade of junior high school. It's a very small brewery. Terroir Female head brewer They make red rice sake. Special press (metal plate between sake bags) There are many things to see and do. It doesn't say, but according to the official website and an article in the Kobe Shimbun, it's unfiltered. I wonder if it has a banana-type sweetness. Is it rice juice? It has a strong rice flavor, almost like rice juice. Surprisingly, it has sweetness and acidity, but it is quite heavy. The sweetness is quite elegant. It is rare to find 900ml sake. It is sweet, but it is a classic type of sweetness. I heard that the Honjozo (raw sake) here is sweeter, so maybe I should go to Mita and look for it. I saw a review that said it was similar to the instrument Masamune. After a few days, it gets more acidic and pungent.
