I bought it at a sake brewery when I visited Kurashiki at the end of September. I did not know that there was a sake brewery in the Bikan Historical Quarter, so I was led into the store. I was asked about my taste in sake, and this is what was recommended to me. The aroma spread from the moment the sake was poured into the cup, the taste was full and thick with rice flavor, and the dry sake disappeared quickly and easily. The 500mL bottle size can be consumed in one sitting, which is just the right size for a sake that changes its flavor as time goes by.

Purchased at the Chiba Prefecture Antenna Shop, which was open for a limited time at Hankyu Umeda Station. I had drunk Seisen from the same brewery in the past and was not fond of hiyaoroshi, but I was impressed with it. The first aroma was already gorgeous. It is sweet and a little tangy on the palate. I had not had the pleasure of visiting Sado last year, but I found this at a liquor store in town when I wandered by. I was hooked by the power word "centrifugal separation" and decided to take it home immediately. This is a good sake. It is very soft and elegant on the palate. The rice is made from Gohyakumangoku with a 55% milling ratio, but it is beautiful, with the sweetness and flavor of the rice riding on the transparency of the 35% milling ratio. The aroma is banana-like. The taste is full of sweetness, but the gradual entry of acidity is clear and the balance of sweet and sour is pleasant.

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).

The last one is Fusozuru. It will be served warm. The top-tasting aroma is that of thick rice. The mouthfeel is clear and the umami of rice is directly conveyed. The aftertaste has a slightly matured or aged feel to it, but I think this is what makes the umami so convincing. The finish is soft and fluffy, with a soft acidity and astringency. The image is quite dandy and austere. Fuso is an old Japanese alias, but when I think of Fuso, I think of the Mitsubishi Fuso truck or the battleship Fuso of the Imperial Navy.
