This month we had a lot of drinking outside, so it's been a while since I've had a drink at home! I got a bottle of summer sake "Kashoku", which is rarely seen even in my hometown, because there was some left at the liquor store! The mouthfeel is sweet with a refreshing acidity, and the mellow aroma lingers until the end. It seems that more emphasis is placed on the mellow aroma than on the refreshing taste! Although it is a summer sake, it is a perfect bottle for long nights in autumn. I felt it has the potential to be as good as many dishes in the autumn season of taste.

(Sequel) Six people drinking together, no matter how much sake you have, it's never enough (lol), so we rushed to a store selling Kochi sake in the basement of the antenna store to consult with the owner. The friendly owner suggested this one when I told him my budget and preferences. It has a beautiful, cool label, and the taste is light, yet refreshing. Of course, it is perfect for Kochi cuisine👍.

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).

Tonight, we continue our series of firsts with this one, named after the female toji known for her work at Tomikunaga. This sake is brewed with Hachitanishiki and Yamadanishiki. The freshness is alive and well, and the melon aroma (typical of Yamada Nishiki) is faintly felt at first, but then the sharp dryness and acidity overflow into the pineapple aroma (So_1F34D) without the sweetness of Hachitan Nishiki and continue until the finish. It's a label buy! LOL! It had a nice aroma, just the right amount of acidity, and was easy to drink. A few days after opening the bottle, it was mellower and I personally prefer it to just after opening the bottle! I would buy it again if I come across it again!
