Rice used is unknown Since this brewery does not have a sake brewing license, it is said that the brewery goes to Nagano Meisho to make sake. There is a pattern of having sake brewed on consignment, but this method is unusual. I imagined it would be a good old-fashioned sake from the label, but it was light and very easy to drink ❗️. Brewed by Wadaryu Shuzo in Ueda, Nagano Wada Ryu Junmai Freshly Pressed Unpasteurized Sake This sake is badass 😂. I heard it was freshly made, Fresh and juicy. Today we went for a drive to Shinshu 🚗Through the Juushi Pass where my husband used to ride his motorcycle in his youth, we went to a sake brewery in Shinshu with a sense of nostalgia ‼️ We bought a bottle of Miyamanishiki, the first in the Tomisui series 🥰, a sake with a moderate aroma, sweetness to rice flavor, and a nice sharpness, which was intended to be a food sake 🩷. The sweetness and umami were refreshing from the first sip! In a word, "clarity"✨It has a good balance of acidity and bitterness in a light flavor, and is just so refreshing and crisp. ‼️It is 16 degrees, but it is easy to drink because there is no spiciness or alcohol smell, which is bad💓. When I compared it with the Miyamanishiki Junmai Daiginjo, which is made from the same rice as the Miyamanishiki and has a little bit left over in my house, the Miyamanishiki has a slightly stronger and richer aroma than the Miyamanishiki, but both have a well-balanced and light flavor of rice without any spiciness or alcohol smell. Today, we paired it with chilled tofu with leek sauce, gyoza, and sukiyaki udon! The sukiyaki's soft and spicy broth with the egg, combined with the light and delicious Tonomizu, was the perfect combination 🎉. Sake impressions by itself are the responsibility of shinsaku3 💕.

We had it cold. The color is a little yellowish. The aroma is sweet, with a lactic acid-like fermentation aroma of Yamahai. The mouthfeel is smooth, smooth, and heavy. The taste is mild at first, but then the juicy lactic acid acidity is strongly felt, with a burnt caramel-like flavor and a heavy grain-like flavor. The aroma on the nose is softly apricot. I bought this at the brewery's direct sales counter on my GW trip to Nagano! I had a great shopping experience with the courteous staff and went home feeling great! The aroma is what you would call "sake" with a hint of alcohol. It also has a grassy nuance. Immediately after taking a sip, there is a pleasant sourness that lasts until the end. Of course there is sweetness, but if anything, it is more umami. The bitterness is gentle at the end. It has a juicy atmosphere with acidity as if it is made from a sake yeast yeast. Kurosawa is a brewery that specializes in making sake from the "nama-hashiroshi," so I was convinced after drinking it that it was made from the "nama-hashiroshi. I was told at the brewery that the sake has an excellent balance of the four tastes of sweetness, flavor, acidity, and bitterness, and this is exactly what it tastes like. It has a good acidity, but it is not showy at all. It is a sake that goes well with any meal, and I am sure I will become a fan of Kurosawa Shuzo after drinking it. This is their regular product, so they are a brewery of extraordinary quality. It goes well with shime saba (mackerel), salty yakitori, grilled fresh onions, and omelettes! It goes with everything!

Purchased at a new roadside station in Yachiho Kogen. The brewery is located in the uppermost reaches of the Chikumagawa River. ☀️ Masamune hunters go today🍶. I found an undrinkable Masamune at "TABI BAR & CAFE SUZUVEL" 😆. It is a Masamune brewed by Obata Shuzo, famous for Manotsuru. It has a mineral aroma 😳. Clean herbal mouthfeel 🌿. The aroma is so rich that the sensation of sake fades 🫥. Rice flavor🌾 masks the sweetness and acidity, and the ginjo aroma stimulates the nose. It leaves a slight bitterness and astringency in the aftertaste🙄. It was a new drinking experience with a unique flavor 🤗. How cool to "speak without speaking" 🤩. I thought I should come up with a catchphrase like "Nice Masamune without talking about it" ❓🤣. Nice Masamune👍

Rice used is Miyamanishiki I didn't find it too harsh, but my partner, who prefers a gorgeous sweet taste, found it too much for his palate. It is true that the alcohol taste comes first, and the mouthfeel is not smooth. As the day goes by, the corners are removed and it becomes more moderate, so it might be better to go out with it slowly, but I don't dislike it in this way.

Tonight, we continue our series of firsts with this one, named after the female toji known for her work at Tomikunaga. This sake is brewed with Hachitanishiki and Yamadanishiki. The freshness is alive and well, and the melon aroma (typical of Yamada Nishiki) is faintly felt at first, but then the sharp dryness and acidity overflow into the pineapple aroma (So_1F34D) without the sweetness of Hachitan Nishiki and continue until the finish. It's very refreshing and easy to drink 😋.

It's a label buy! LOL! It had a nice aroma, just the right amount of acidity, and was easy to drink. A few days after opening the bottle, it was mellower and I personally prefer it to just after opening the bottle! I would buy it again if I come across it again!
