First brand name Kita no Hana. It is a backroom deal with a sake teacher. Even if I say it is a backroom deal, he will sell me any rare sake at the same price I bought it from the liquor store, and even if I tell him I will take care of the transportation costs, he stubbornly refuses to accept it. I told them that if I sold them at a higher price, the liquor store would take me on as a reseller, and after that, they would never sell me rare sake. The fact that you can normally drink Jyushiyo at home is based on the mutual trust between the seller and the buyer. Kita no Hana, the label is very attractive. I don't detect much of the Kamitatekoso, but there is a round, unfamiliar aroma in the back of the bottle. The mouthfeel is moist, calm, and elegant with sweetness and soft umami, and the rounded aroma in the aftertaste is fruity. The acidity and bitterness are both moderate, and it has a mysterious sharpness that just flutters and closes. It is really a round, gentle and mysterious sake, and this must be one of its balances. This is the fifth brewery in Saku's sake brewery series. This is a rare bottle as it has recently met with a fire and is closed. We happened to find it at a one-day spa and secured it. It has a strong bitterness and acidity, with a tangy mouthfeel. It also has a sweetness, so it is not harsh. It is the best sake from Saku so far. It's a shame that we won't be able to taste it for a while. I hope they will do their best to bring it back.

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).

Sake that I bought as my souvenir when I visited Minamisanriku Town. It has a dry dry taste with (in my opinion) a good amount of miscellaneous flavors typical of junmai sake. You don't feel it as you keep drinking. I participated in a storytelling session about the tsunami damage in Minamisanriku Town. I couldn't believe that a 22-meter tsunami had hit a four-story building along the coast. Even though I actually visited the place, I could not help but feel it when I saw the now calm sea. Hearing about that time always brings tears to my eyes. Perhaps it is because I am from Tohoku. To what extent does "reconstruction" mean?

The third group of the Sake Rice and Yeast Association is Gintome and Yuko's Idea from Iwate Prefecture. Iwate is often named after the pure-heartedness of the Tohoku region or after Kenji Miyazawa, and the rice is Gintome, which is a Gin user. Yuko, the yeast, seems to be named after the developer, Ms. Yuko Yamashita of the Iwate Prefectural Industrial Technology Center. It is a clear, dry sake. Sake from Iwate is interesting in many ways.
