The aroma is sour, rancid, and faint.
When you drink it, the chili-swirling mouthfeel is followed by muscat and citrus-like acidity, and then the umami permeates the palate.
It is not so much "dry" as "za! It is not so much dry as gently umami. The alcohol is not so much that it bothers me, but the sharpness when swallowed is quite good.
As the day goes by, it settles down and the flavor comes together. The mouthfeel is smooth and easy to drink, and it is refreshingly tight.
I remember that the Tsuneyama I drank last year became a little sweeter after opening, so I wondered if it would be better to drink it earlier. This time, however, the process was different.
I enjoyed it with a meal.

This is a Junmai Ginjo from Fukui sake brewery, Tsuneyama Shuzo. The clear bottle and cool label foreshadow a refreshing sake.
It seems to have a slight color.
In the mouth, one can feel a fine gasiness, and there is a wonderful harmony of refreshing sweetness and bitterness that spreads across the palate. There is almost no acidity, and the slight bitterness that can be felt gives it a firm kick.
It is a stable 100% Ihyakumangoku.
As I expected from the first taste, it is a refreshing summer sake, and I enjoyed it with kelp kamaboko, a regular entrée at our house.
I forgot to record this specialty of Tsuneyama, Zuichi Special😍.
This one has amazake added at the end 🤭.

It's sweeter than the regular type, but the fresh acidity gives it a clean kick.
I've always liked sweet, so I prefer this one compared to the regular one 🫠.

Spend GW with this girl! This is a very limited edition sake from Tsuneyama that sits only in a limited number of distributors! I was hesitant to buy it because it's a bit pricey & it's a bottle, but I bought it after reading Nork's review!

The picture below shows a gorgeous bottle of this sake made from a pure Daigin standard of Gohyakumangoku (Tsuneyama Kyokyu?) with a lot of sake lees from Sakahomare brewed with the same sake!
Open the bottle! The pressure was so strong that I thought my fingers would be blown off 😂They are very vigorous! Automatic stirring as a matter of course lol...
The aroma is quite mild. It has a nice sakekasu aroma! If it's a polar base, it will turn into melon in time 🍈.
When you include it...it's delicious! 🫨🤣🫨🤣 Well, it's a Tsuneyama, so it's what you'd expect, but it's a dry, refined Tsuneyama with a stronger than usual carbonation! It's dry when cold and melon-like sweetness as the temperature rises. ☺️ It was quite dry at first sip, but after about an hour it became sweet, delicious and spicy carbonated, quite different from the Tsuneyama Kyoku. ☺️
Echizen dry is the best!
