It's been a long time since I've been to Tsuneyama. Or rather, for the second time.
The "Betsumetsu Usunigori Nama" is sold exclusively at Wadaya, a liquor store in Oimachi, and is very rare.
It is said to be the regular "Junmai Ginjo Dry Tobirai" with some nigori added to it that contains umami flavor.
It has a slight effervescence, plenty of umami, and a refreshing taste, making it a bomb-ugly gem perfect for the current season and even this year's number one.
If the timing is right, I would definitely like to drink it again!
Hi shogot1978, ☀️
I also got this one from Wadaya's hanpukai! I remember how refreshing it was and how delicious it was with lots of rice flavor 🤤 It's nice to be able to drink something a little different from your usual custom-made sake 😋.
Hi shogot1978 😃 We had the regular Shiboritate Tobi and it was so good we couldn't help but say "yeah!
We had the regular Shiboritate Tobis, and it was so good that we couldn't help but say 😍😍.
It says "Dry" on the jacket, but it's not dry, it's more like a sophisticated, clean, and crisp sake.
By "modern" I don't mean "flirtatious" or "perfumed", but rather "stripped down to the bare essentials".
Like Nanao, not Yuuchami.
It has umami and spiciness, but not too much, and you have to look for the bitterness and astringency, but it keeps the taste tight so that it doesn't become dull.
I wonder if this is a coincidence or if they are aiming for it.
If it's a deliberate effort, I think it's a very precise technique.
I don't know.
Hi, Takesan 😃.
Dry sake 🍶 for sashimi, right? I've only had two bottles of Tsuneyama, but both were very tasty 😋.
I've heard it was originally super spicy, so it must have changed with the times 😌.
I don't know 😆.
Hello Takesan🌞 Glad you enjoyed drinking Tsuneyama! It seems that when the current brewery toji was replaced, he invested in technology to refine it while keeping the original goodness (like micro-bubble rice washing). In other words, they are aiming 😎.
Junmai Ginjo-shu Gentatsu ⭐️⭐️⭐️⭐️
100% Gohyakumangoku produced in Fukui Prefecture
Polishing ratio: 50% for koji rice, 60% for kake rice
ALC 15 degrees
It has been a long time since I visited SAKE Toto.
It is fun to encounter new brands and summer sake.
The aroma is only faintly perceptible, and in the mouth, there is a slight stimulation on the tongue. It is a sharp, slightly dry sake with a good balance of acidity and bitterness.

The aroma is fresh and melon-like, and the first sip of this wine makes you say, "It's beautiful.
Fruity but not too sweet, with a gentle minerality and core flavor that lingers in the aftertaste.
It is not overly clear, as is often the case with daiginjos, but rather, it gently retains its sake-like character,
It is impressive in its subtlety with a firm thickness and lingering aftertaste.
It is neither too light nor too heavy.
It is like pure water flowing out of the mountains.
The more you drink, the more you want to know more about the taste.
Even if you drink a full bottle, you will never get tired of it and enjoy it slowly.
By the way, what is "Echizen Wakamizu"?
Etsuzan Shakusui" is a word that symbolizes the nature of Fukui, representing the mountains of Echizen and the pure water of Wakasa.
The strength of the mountains and the gentleness of the water - this is a bottle that lets you feel both.
Dry sake from Tsuneyama, last time I drank the raw sake and enjoyed it, so this time I tried the fire-brewed type.
It has a refreshing cucumber-like sweetness that is just right, and the second half is dry and dry. Although it is fire-aged, it has a fresh feeling and is a light sake that is perfect for this time of year.
